    ½ medium onion (110g) finely diced
    1 cup of spinach (43g roughly chopped)
    2 whole eggs
    ¾ cup egg whites (180g)
    ¾ cup low fat evaporated milk (90g)
    2 cloves garlic (minced)
    ½ tsp salt
    ¼ tsp ground pepper
    5 oz Canadian bacon (142.5 g chopped)
    ¾ cup 2% mozzarella cheese (84g)
    2 tbsp dried herbs (chopped parsley, basil, or cilantro)
