Flo, I happen to know that the "Italian Restaurant" and any other Italian recipes with cream or creamy sauces, or any type of greens also has bit of nutmeg which gives the dish it's distinctive flavor. I keep my nutmeg in the freezer and just grate some (not a lot) in after it has cooked. Love your videos! You're the reason I bought my Instant Pot.

+Joyce Stewart So kind, Joyce! Thank you! And that's a great idea, storing nutmeg in the freezer!

Flo Lum I've done cauliflower in other soups as a sub for potatoes. As long as you don't need the starchiness, you'll be just fine, and I prefer it.

you need to pour the broth out of the box with the hole at the top (not the bottom) so it doesn't splash the whole time you're pouring it out.

That looks great.. Could I use bratwurst, as I have a case of them in the freezer.. They are the regular, not beer bratwurst. If so, what added spice would you use with them..

    • @FloLum

Sorry for the delayed reply... did you try the bratwurst? I would probably add a pinch of crushed red pepper flakes, 1 tsp basil and a bay leaf.

Hahaha. I was just watching not listening and I thought you were putting apples in. Half moons it is. I was told by Olive Garden that it was chard they put in. Chard is related to beets and kale is related to cabbage, I thought they were in the same.family. Yum Flo, thanks.

I stopped eating beef about 5 years ago but sometimes I do crave as good beef burger or we'll have beef of course with our pho. My mom's husband died 2 years ago from stomach cancer and I say it's from all the beef he ate. He was big on beef especially a big fat steak. Thanks for the info, now I'm going to be more cautious and think before I eat beef and processed meats.

    Hello,
forgive my English, use google translate.
I am writing to you because the dish you have prepared is not the "Tuscan soup", it has nothing of Tuscan soup.
Zuppa Toscana is a typical dish, like many other international dishes, and has specific ingredients and preparation methods. You can call it my soup or my grandmother's soup, but not Tuscany soup otherwise it's like making a portrait and call it "La Gioconda", the difference is there
    Ingredients for 4 people
    300 GR OF TUSCAN BREAD
    400 GR OF WHITE BEANS
    1 BLACK CABBAGE
    ½ CAVOLO VERZA
    3 BIETOLA BEETS
    2 CARROTS
    2 POTATOES
    2 ONIONS
    2 PHASES OF CELERIA
CONSERVATION (OR TOMATO CONCENTRATE) How much is enough
    SALT AND PEPPER
    EXTRA VIRGIN OLIVE OIL
How to prepare the bread soup
Take a pot with oil and fry the chopped onions, carrots and celery and boil the beans in the water. When the sauté is ready, add the preservation diluted in hot water. Add the chard, the two sliced cabbages and the thick sliced potatoes. Put salt and pepper q.b. and cook with the lid for a few minutes, then pour into the pot all the broth of the beans. Cook for at least forty minutes, then when all the vegetables are well cooked, add the sliced bread and whole beans. Allow to boil some more minutes and serve hot or refrigerate for the evening or even the day after.

As you can probably tell, Flo is not in Italy. In the United States, there is a restaurant chain called ''The Olive Garden'' that serves a popular soup named Zuppa Tuscana. This is an Instant Pot version of that soup. That the restaurant's version of the soup is not authentic is not the point. Flo did not claim to be making an ''authentic toscan soup''. She is teaching people who love this soup how to make it.
Does absolutely EVERYONE in Italy use the SAME recipe? Not a single creative twist is made, ever? Not a single ingredient or amount is different from your neighbour's recipe? Never in the history of cooking did a person say: I don't like beets, I'm not gonna put them in this soup? And recipes change fron region to region... Cooking is experimenting and exploring creativity. Just try and enjoy what is different from what you are used to.
