  • Meat pickles are quite popular in the state of Nagaland. Beef and pork pickles with king chili in them are literally a 'hot' favorite. Though this recipe is from Nagaland, They are quite a favorite among other Northeastern states as well.
    In this video I am showing you how to make shredded meat pickle, quick and easy.

    I m bihari but I was living in nagaland ( kohima).... St Xavier's school.....my all nagas friends gave me to eat....and from that day I just love it ........and when I see this video....I feel the taste of pickle🤤🤤🤤🤤🤤🤤🤤🤤......right now I'm in bihar.....but whenever I miss nagas food..first I use to miss that pickle....

    Will it be more tasty if the beef is smoked in traditional Naga process before shredding? I'm saying so because smoked flovour will go very well with the subtle bitterness of the pickle and the beef will be more crisp. Please correct me if I'm wrong. I'm addicted to your recipes, keep it up

    Your meat recipe looks fantastic. Just my concern adding bitter guard wont it make the pickle abit butter?

    Wow! How did I miss this channel,
    I'm from South (Chennai) and I have many north east friends and I became a fan of North East,
    There's a Nagaland restaurant in my place and I'm a regular customer there and am addicted to North East cuisine 😀

      Thank you SO much for your kind words. Actually Chennai is like my second home. I studied at MCC and worked there. I absolutely adore Chennai, its culture and its people. I even speak enough Tamil to bargain with the auto anna's. Are you talking about 'Naga Reju' near the Choolaimedu signal junction?

      Eat Your Kappa Yes I'm taking about Naga reju, and guess what even I'm student of MCC 😀(Social work dept.), and yeah that's true Tamil is so important to bargain with auto annas,

      Yaay :) a fellow MCCian. I am from the Communication dept. The world is so small.. Naga Reju is nice place, I go there once in a while. There is another Manipuri restaurant around the same area right next to Kailash kitchen. I had meals there recently and I found the food good there too. Give it a try, you might like it.

      It is Meghalaya :) West Khasi hills bordering Assam to be more specific. The beauty of these landss is priceless, especially when you have to work in metropolitan cities for a living. Whenever I am back home, I feel like I am in heaven.

    I want video of chicken chutney that is sold in market made in nagaland. Cost is high rs 150 for 50gm or so but tastes faviolous.

    Hi Is it the same preparation that one used to get ready made dry brief pickle from Dimapur. BTW adding bitter guard will make the prickle bitter, any suggestion.

      More or less the same. The dry beef pickle the sell commercially are very very hot, this one is mildly hot. Trust me, the addition of the bitter guard doesn't make the pickle bitter, it in fact enhances the flavor.

      It will last for a month in room temp. and longer if you keep it in fridge. remember to use a air tight jar and always use a dry spoon.

    I live in middle east, I never saw bitter gourd or mustard oil. What can substitute them?

      U can skip the gourd ... And for oil you can substitute it with sesame seed oil

      heena riju It's yum with pork meat... use lean meat of pork though fatty meat might not give same results. You can try it with 🐐 goat meat too.. even chickens breast meat is good as it's fibrous.

      Yes, like Zamzami said, it is meant to be dry, we add the bitter guard to provide some sort of juiciness to it.

      Pritom Sangma hi it adds volume, gives a nice texture to dry meat and adds a subtle flavor to the dish. Trust me even though bitter gourd is used, there is no bitterness in the dish.

      Trust me bitter gourd does not make the pickle bitter or spoil the taste, it gives it a very unique flavor. I am not sure if you can substitute anything else instead of bitter gourd. If you don't want the bitter gourd, just drop it from the ingredients, the pickle should be fine.

      I am not really sure about the exact role. I have made versions with bitter guard and without. The one with bitter gourd has a distinct flavor and has a sort of juiciness to it.

      Trust me, the bitter gourd in the pickle enhances the taste, it is not bitter at all. You can make do without the bitter gourd, the pickle will be bit drier in texture and not that juicy though.

    How is this meat pickle eaten? I am always frustrated when I view a delicious recipe on YT but the manner of eating it is not shown.

      Ha ha .. I can understand your frustration. You can have it as a side to your meal (boiled rice is Northeast's staple) It's actually so delicious that, I have it just like that .. every time I walk into the kitchen.

      Yes you can, avoid too much of fat portion, that might make the pickle very oily. If you are using chicken meat, use the fibrous breast part of the chicken. :)

      Depends.. if u can skip the gourd and fry the beef till it loses all the moisture it will easily last for 2 weeks on room temperature

    Can whole chilies or chilly powder be used instead of chilli flakes?

      Chili flakes adds more mass to it. The pickle is good if the ingredients are coarse. I have used both chili flakes and chili powder. Chili powder for the heat and flakes for the texture. I wouldn't suggest using whole chilies. Just coarsely grind your dried whole chili and use it.

    But why bittergourd? I dnt understand. It wouldn't make it bitter? We aruncahalee also make such type of chutney. But don't use bittergourd

      Trust me the bitter-gourd add no bitterness to it, I feel it adds to the volume, texture and gives it a distinct flavour. It is definitely not bitter, I have made it this way several times.

      Tamg zai same procedure for the pork meat too. Just avoid too much of fatty parts and the skin. The meatier it is the better.

      sam mom haida se ouija, indiba na'a kankelong ni kha'a ni gimin replace kana chanchienga ongode jajregnabe ontiti ba kha Jawa.. brown onpile joa ni gimin.. infact it gives a nice flavor.. 😊 or you can avoid it totally but believe me it tastes better with the bitter gourd 😊
