The very first time I tasted it in the hostel from a frnd...I was very sure that I am going to make my own bottle of pickle at home...thank u for the recipie
The first time I tried nonveg pickle was in college, my friend from AP had brought it, didn't even know such a thing existed before. It was delicious!! Thanks for the recipe :)
I m bihari but I was living in nagaland ( kohima).... St Xavier's school.....my all nagas friends gave me to eat....and from that day I just love it ........and when I see this video....I feel the taste of pickle🤤🤤🤤🤤🤤🤤🤤🤤......right now I'm in bihar.....but whenever I miss nagas food..first I use to miss that pickle....
Wow! How did I miss this channel, I'm from South (Chennai) and I have many north east friends and I became a fan of North East, There's a Nagaland restaurant in my place and I'm a regular customer there and am addicted to North East cuisine 😀 Thank you for sharing your videos, I can enjoy your culture through your videos and I will definitely visit North East one day, that's one of my Goals, Make more videos and I'm wishing all success to you and your channel, keep going!
Thank you SO much for your kind words. Actually Chennai is like my second home. I studied at MCC and worked there. I absolutely adore Chennai, its culture and its people. I even speak enough Tamil to bargain with the auto anna's. Are you talking about 'Naga Reju' near the Choolaimedu signal junction? Do come to Northeast, I can make an itinerary for you.
Eat Your Kappa Yes I'm taking about Naga reju, and guess what even I'm student of MCC 😀(Social work dept.), and yeah that's true Tamil is so important to bargain with auto annas, I'll definitely get suggestions from you before I come to North East 👍
Yaay :) a fellow MCCian. I am from the Communication dept. The world is so small.. Naga Reju is nice place, I go there once in a while. There is another Manipuri restaurant around the same area right next to Kailash kitchen. I had meals there recently and I found the food good there too. Give it a try, you might like it. Yes please, you can mail me at eatyourkappa@gmail.com I will be more than happy to give suggestions or help you plan your trip. Nandri :)
Your meat recipe looks fantastic. Just my concern adding bitter guard wont it make the pickle abit butter? How is this pickle to be stored shelf life. Thanks for sharing.
Will it be more tasty if the beef is smoked in traditional Naga process before shredding? I'm saying so because smoked flovour will go very well with the subtle bitterness of the pickle and the beef will be more crisp. Please correct me if I'm wrong. I'm addicted to your recipes, keep it up
Hi Is it the same preparation that one used to get ready made dry brief pickle from Dimapur. BTW adding bitter guard will make the prickle bitter, any suggestion.
More or less the same. The dry beef pickle the sell commercially are very very hot, this one is mildly hot. Trust me, the addition of the bitter guard doesn't make the pickle bitter, it in fact enhances the flavor.
Trust me, the bitter gourd in the pickle enhances the taste, it is not bitter at all. You can make do without the bitter gourd, the pickle will be bit drier in texture and not that juicy though.
Really Great Video. Planning to make it soon. 🙂 But could you let me know the purpose of putting in the bitter gourd...or...if I want I can skip the bitter gourd part?
where are you from??? love the background, beetlenut n jackfruit tree... crowing rooster n chicks chirping typical meghalayan village.. looks n sounds peaceful
It is Meghalaya :) West Khasi hills bordering Assam to be more specific. The beauty of these landss is priceless, especially when you have to work in metropolitan cities for a living. Whenever I am back home, I feel like I am in heaven.
Trust me bitter gourd does not make the pickle bitter or spoil the taste, it gives it a very unique flavor. I am not sure if you can substitute anything else instead of bitter gourd. If you don't want the bitter gourd, just drop it from the ingredients, the pickle should be fine.
hey nambie i made this beef pickle and its really tasty i ws lil hesitant whether it will turn out good coz i have nevr made pickle in my life but it was good thankyou so much love you
Pritom Sangma hi it adds volume, gives a nice texture to dry meat and adds a subtle flavor to the dish. Trust me even though bitter gourd is used, there is no bitterness in the dish.
Tokiu Yim Hey hi :) what a surprise. If it wasn't for the sudden line change, we could have extended our conversation. Thank you SO much, I am so glad you liked it.
Ha ha .. I can understand your frustration. You can have it as a side to your meal (boiled rice is Northeast's staple) It's actually so delicious that, I have it just like that .. every time I walk into the kitchen.
heena riju It's yum with pork meat... use lean meat of pork though fatty meat might not give same results. You can try it with 🐐 goat meat too.. even chickens breast meat is good as it's fibrous.
Yes you can, avoid too much of fat portion, that might make the pickle very oily. If you are using chicken meat, use the fibrous breast part of the chicken. :)
I liked the brass instrument you were stirring with in this video. What is the name of it? It looks like what in Canada, we might call a "spatula", but it is much more handsome.
Pls upload the recipe of ja doh (rice n chicken blood) khasi dish I want to cook ths dish at my home actually I tried it once in shillong last time I visited in December last year
Love your channel! Cooking out in the open is truly the essence of North-Eastern cooking. And keep up with this amazing work! Looking forward to more dishes
I am not really sure about the exact role. I have made versions with bitter guard and without. The one with bitter gourd has a distinct flavor and has a sort of juiciness to it.
Chili flakes adds more mass to it. The pickle is good if the ingredients are coarse. I have used both chili flakes and chili powder. Chili powder for the heat and flakes for the texture. I wouldn't suggest using whole chilies. Just coarsely grind your dried whole chili and use it.
Trust me the bitter-gourd add no bitterness to it, I feel it adds to the volume, texture and gives it a distinct flavour. It is definitely not bitter, I have made it this way several times.
Hey, thank you SO much for your kind words and support. Yes I have instagram id and other social media accounts. The links are mentioned in the video description.

Thank you 'Eat you kappa' I have made the meat kappa and it tastes the same I used to eat in Nagaland...
Is it necessary to used the bittergourd?
The very first time I tasted it in the hostel from a frnd...I was very sure that I am going to make my own bottle of pickle at home...thank u for the recipie

You should make it and eat it whenever you want😂😂
I live in middle east, I never saw bitter gourd or mustard oil. What can substitute them?
U can skip the gourd ... And for oil you can substitute it with sesame seed oil

Thnx a ton..😍😍😍I was hoping for some one to make a video on how to make shredded meat pickle.
How many months can I keep this?
Can anyone let me know the real purpose of bitter guard in this recipe?! Kinda curious.
Why bitter guard is being added?
For how many days will it last ?
In a dry air-tight container should stay for 6-7 months.
Can we make without bitter gourd?
Trust me, the bitter gourd in the pickle enhances the taste, it is not bitter at all. You can make do without the bitter gourd, the pickle will be bit drier in texture and not that juicy though.
Ok thanks. Btw how long can I store this pickle??
I tried this yesterday and it turned out delicious. 💟💟💟💟💟
Hello Eat Your Kappa..
How many days we can preserve this dish? (If we don't have refrigerator)
U can preserve for it months ..make sure to store it in a cool place.
Really Great Video. Planning to make it soon. 🙂
But could you let me know the purpose of putting in the bitter gourd...or...if I want I can skip the bitter gourd part?
Abhinav Phukan yes, you can skip the bitter gourd and the onions if you want
So sis how many days can we keep the pickle
that will last a month, but the problem is it gets over in couple of days as it so delicious.
How long can we store this without using refrigerator? Please do reply
For months and i know this coz im from nagaland too:)
For How long can it can be stored?
You can have it for a month or so and longer if you keep it in fridge, but trust me it's so delicious that it doesn't last more than a week.
where are you from??? love the background, beetlenut n jackfruit tree... crowing rooster n chicks chirping typical meghalayan village.. looks n sounds peaceful
It is Meghalaya :) West Khasi hills bordering Assam to be more specific. The beauty of these landss is priceless, especially when you have to work in metropolitan cities for a living. Whenever I am back home, I feel like I am in heaven.

Can we make it a bit wet? I made it and it felt very dry.
However it was delicious.
Its supposed to be dry :)
Yes, like Zamzami said, it is meant to be dry, we add the bitter guard to provide some sort of juiciness to it.
Nice vid. Support from Mizoram. Kuhva kung in va ngah ve. 🤗
Hi dear
Can we substitute bitter gourd with anything else?
Trust me bitter gourd does not make the pickle bitter or spoil the taste, it gives it a very unique flavor. I am not sure if you can substitute anything else instead of bitter gourd. If you don't want the bitter gourd, just drop it from the ingredients, the pickle should be fine.

Pritom Sangma hi it adds volume, gives a nice texture to dry meat and adds a subtle flavor to the dish. Trust me even though bitter gourd is used, there is no bitterness in the dish.

Can I follow the same recipe for chicken pickle? Or will it be a disaster? I'm seriously considering it. Please let me know. Thanks.
wow nambie.... since I don't eat beef m going to try it with pork....
heena riju It's yum with pork meat... use lean meat of pork though fatty meat might not give same results. You can try it with 🐐 goat meat too.. even chickens breast meat is good as it's fibrous.
Beautiful surroundings, homely food ,nice presentation.. Keep up the good work girl😘
Can I use Pork or Chicken instead of Beef???
Yes you can, avoid too much of fat portion, that might make the pickle very oily. If you are using chicken meat, use the fibrous breast part of the chicken. :)
Eat Your Kappa thank u 😊
I liked the brass instrument you were stirring with in this video. What is the name of it? It looks like what in Canada, we might call a "spatula", but it is much more handsome.

This is very much like a Burmese dish I like to make. What is the role of the bitter gourd here?
I am not really sure about the exact role. I have made versions with bitter guard and without. The one with bitter gourd has a distinct flavor and has a sort of juiciness to it.
Thanks for your quick response.

Can whole chilies or chilly powder be used instead of chilli flakes?
Chili flakes adds more mass to it. The pickle is good if the ingredients are coarse. I have used both chili flakes and chili powder. Chili powder for the heat and flakes for the texture. I wouldn't suggest using whole chilies. Just coarsely grind your dried whole chili and use it.
Eat Your Kappa thanks a ton.

Trust me the bitter-gourd add no bitterness to it, I feel it adds to the volume, texture and gives it a distinct flavour. It is definitely not bitter, I have made it this way several times.
