Traditional bread | Bread comes out too hard in winter? Two ways to make soft and tasty bread!

  • • Ingredients: traditional bread
    High-protein flour 300 grams, 0:32,
    Yeast 3 grams, 0:32,
    Milk(room temperature) 320 grams, 0:37,
    • Mix the above ingredients and wrap it with plastic wrap, then let it rise for 2 to 3 hours
    under the temperature of about 15 degrees Celsius, or keep it in the refrigerator compartment for 10-12 hours. Let it rise till it gets to twice the size and there are many small holes inside.
    High-protein flour 300 grams, 1:12,
    Powdered milk 30 grams, 1:15,
    Yeast 3 grams, 1:17,
    White granular sugar 80 grams, 1:19,
    Egg one of about 60 grams, 1:28,
    Butter 50 grams, 1:32,
    Salt 2 grams, 1:34,
    • Mix the above ingredients, knead it till there is thick hand mask after a pull. We once shared a video with detailed recipe for kneading dough with hands, please search it from my homepage if necessary. It’s very important to proof properly after finish making the raw bread. It rises slowly in cold days, we can keep a basin of hot water in the oven during the proofing, and if the water gets less hot, replace it with hot ones. The hot water will make a warm and moist space, so as to help the raw bread rise faster and also minimize water loss, this way the bread will come out very soft.
    • Baking temperature for an 80-liter oven: preheat the oven to 180 degrees for top heat and bottom heat. Keep it on the lower layer of oven. Make sure it stays in the middle part and bake for about 20 mins. A smaller oven usually provide more heat, so please reduce the temperature by 10 degrees for every 10-liter reduction in oven capacity.
