Absolutely beautiful and tasty chutney. Really love imli chutney, and I am just like you, I grind all spices as I dislike the whole ones ,spoils the taste for me. This looks perfect dear.
Let it sit for a little while. The oil will come to the top and you can dab it with some paper towel to remove some of it. If it doesn’t thicken to your liking, you can always cook it again for a little bit longer after removing the oil :)

I am Indian and was searching for the chutney I used to find served with Samosas and Kachoris in India in the 1980s, in Rajasthan state. Isn’t it ironic I found that chutney not in a typical Indian channel but in one from Fiji 🇫🇯 💞. Yes this is the same extremely authentic Indian tamarind chutney!
