    You can bleach your cutting board and then put it in the dishwasher and it will come out looking like new. I love my steam canner. I have been using it for about 6 months and it is a game changer in my books. I will be canning red cabbage in the near future using red onions and sliced jalapenos. I love spicy!!. I use this on my hot dogs, sausages and tacos. So good!

    You can have a little fun with those outside leaves. If there are little ones around, you can make a Ph indicator by boiling the leaves until the water is a nice, deep purple. Then discard the leaves and let the water cool. You can divide it into cups and add vinegar, baking soda, etc. The liquid will change different colors for acids and bases. It's safe (but stinky) when done with kid-safe things (vinegar, dish soap, baking soda, etc) and fun! The kids love it.

    Looks good! I can pickled cole slaw with carrts, onions, and peppers. It, too is pretty in the jars, and is so delicious!

    Hi, Linda. Yes, I've made this before. In fact, it was the second thing I ever canned. Like you, I hand sliced the cabbage. And like you, I ended up with more jars than the recipe said. I also ran out of brine. It was thrilling to make something so pretty.
    The second time I made it was this past winter, and I tried to slice very, very thinly, but I still ended up with more jars than the recipe predicts. Fortunately, I was prepared with about 1.5 x the brine recipe. Next time, I would not increase the spices. Increasing them by 50% was stronger than I prefer.
    But notice that I said "next time". I'll continue to make this. I think I might try leaving out the cinnamon sticks for one batch. I think I would find it to be more to my liking and more useful in more dishes. Oh, I also forgot the pickle crisp the second time. It still came out fine. It's a very forgiving recipe.
    Thanks for showing this one to those who haven't tried it.

    I have that same canner. You do have to tighten the jars a little more than they say. I don't like my juices leaking. It was fine with the lids tighter. I have only used it twice.
    I need to check my Ninja presser cooker. I thought I saw where it can be used for canning. Not sure!!! ... But I do want a presser cooker, even if they do scare me. I
    have been looking.
    Your cabbage looks so yummy! I love anything pickled. I find a good brand of pickled beets and they are so good. I'm keeping the juice and putting more beets in it and canning them.

      Can I use a different vinegar? I have the red vinegar, but I am not going to pay a mint for a large jar of the vinegar.

      Hey there T2 here. I use allulose for my sweet fermentations. You use what you can eat. It works.

    I keep all veggy extras the outside leaved and core. Freeze everything and then make veggy broth.
