This reminds me of my late-mother's chicken & dumplings, which is still loved by us four kids (& our families). My mom's biscuits were rather wet/loose, and you kerplop them into the simmering pot to steam. They come out looking very much like yours. This whole process is so worth it, and like you said....the simmering time is good time to catch up on other tasks! This is a hearty dish that is loved by many!
