Classic British Victoria Sponge Cake

  • A delicious cake!
    Ingredients:
    1 cup butter
    2/3 cup plus 2 teaspoons sugar
    4 eggs
    1 teaspoon vanilla
    1 2/3 cup plus 2 teaspoons cake flour
    2 teaspoons baking powder
    1 teaspoon salt
    1/2 cup whole milk
    For the whipped cream filling:
    2 cups heavy whipping cream
    2 tablespoons sugar
    Also for the filling - your favorite raspberry jam
    Garnish (optional)
    Fresh Raspberries
    A sprig or two of fresh mint
    powdered sugar for dusting
    In a large mixing bowl, cream the butter and the sugar. Add the eggs and vanilla and whip until creamy.
    In a smaller mixing bowl, combine the cake flour, baking powder, and salt.
    Pour half of the flour mixture into the butter mixture and mix gently. Add half of the milk and mix again. Add the rest of the flour mixture and milk, and stir to combine.
    Pour into two prepared 8 inch baking pans. Bake at 350 degrees, F for 15 to 20 minutes, or until cooked throughout. It should not take long as the layers are so thin.
    Turn cakes out onto a cooling rack and let cool completely.
    To make the whipped cream:
    Whip the heavy whipping cream in a cold bowl. I use the balloon whip attachment in the bowl of my heavy duty mixer. Add the sugar when the cream has just begun to stiffen. This prevents the sugar from falling to the bottom of the bowl.
    To fill, spread raspberry jam over one of the cake layers, then smooth a thick layer of whipped cream over the jam. Sandwich the jam and cream with the second layer of cake. You can top the cake with a dollop of whipped cream and a few fresh raspberries if you wish. Fresh mint sprig for extra credit!

    This was filmed in 2022. This is one of the many trial-and-error videos that I took down because it wasn't perfect. But I'm putting it back up. If you're mean I'll block you. lol.
