    I’m sure you learned a lot from your first cook. Long time southern pride cooker here as well as stick burner. First, this smoker shines with pork and chicken. Beef is a little but as shown not impossible.
    You made a good choice switching to lump.
    Try this next time. Add a half basket of lump. Add less wood chunks more frequently allowing for more clean combustion. Sometimes I even leave the fire door opened up a crack. You wrapped the brisket about 2 hrs to early. Wrap that puppy up at about 185. When you reach 210 pull it off. We smoke about 225,000 lbs of BBQ per year and never put anything in a cooler. By cooking to 210-215 and just letting it rest regularly for 1 hr is the same as carry over cooking in the cooler. Good luck, avoid store bought wood and thank you for sharing your amazing cooker.     Since you go to Costco. Do yourself a favor and buy the big box of stretch wrap it makes life so much easier to wrap everything especially with the cutter provided inside. I keep mine on the counter in front of the cutting board. I see so many Chefs fighting the cling wrap. Love the brisket though. Still envious of your old hickory smoker. I'm not bagging on you just trying to give you a couple of tips. You are a grill master.

      Eric Ousley Jr Hey Eric, Yes. I had to fill the basket one more time after around the 7 hour mark from there I was able to complete the cook.

      @@DskiGrillz I ordered a Shirley Fab. My wait time is in upwards of 8 months. I'm currently cooking on my WSM. But in answering your question I will probably start with simple cooks...chicken and ribs before graduating to a brisket, turkey or lamb

      runninglow9SS Getting a Shirley Fab has been on my list of smokers to get. I think after that I will officially be done purchasing grills. I know its a great product that will last a lifetime. In the meantime you can’t go wrong with the Weber Smokey Mountian...Congrats on the Shirley Fab purchase..which size did you go with?

      @@DskiGrillz I decided to go with a 24X50 traditional smoker. I am also getting an added grate for direct grilling in the main chamber. I dont do large cooks unless we have company...maybe 2 or 3 times year. So for my usage a 24X50 will be ideal. Typically I'm only cooking for my wife and 3 daughters. I considered getting a trailer, but I don't want to store a smoker in my garage. And my association would frown on me putting it in my driveway. So I opted for a patio smoker.
      The downside with Shirley is the wait but they have my deposit and I'm in line.
      I've considered getting a kamado cooker also but that may be a little overkill. I have the space in my backyard but would I use it?
      In addition to my WSM I also own a Weber kettle and a Bull propane (dont judge a brother...LOL). But a kamado was certainly a consideration.

      runninglow9SS That’s a great size for your patio and the size family you have. I’m also on the fence as I wanted a trailer model from Shirley but same issues with storage. I’m happy with my ole hickory purchase and can say that it has already exceeded my expectations besides the ridiculous weight (870lb)...Not sure if you saw my video on moving this thing to the patio but it was quite an experience. Enjoy the rest of your weekend!

      100% due to the catering I’ve been doing. It would have made my world so much simpler. I love the ACE MM though, I really never thought about the benefits of having the gas assist until I really needed to keep from having to watch over the fuel source on long cooks.

      I use oven cleaner and high pressure water hose clean the inside of the ole hickory. It works very well. Thanks for checking out the video.

      My only regret is not getting the CTO model for catering. I’ve run across some situations where I wish I could have the gas function regulating my overnight cooks where I can get some sleep. Other than that, The Ace-MM was a great purchase for me. Hope this helps.

    75$$ DAYUM Rick Flair!!! The salt , right on I use a lot of course ground pepper n kosher salt rub, wouldn't it be easier with a lock box for it?!! Like a big Tupperware box. Giant minion!! Should be hot 9

      I do need to look into getting a sealed Tupperware container to help with making the seasoning process more efficient. Great feedback Curtis. That pepper grinder almost killed me with that large brisket. Lol

    I have a question I thought a brisket or a beef clog had a star point about 1:50 and normally people wrap it then in butcher paper

      JAMES MOORE Hey James...It is true that the stall happens generally around the 150 to 160 point during the cook. I have gotten to the point to where once I get the bark set, and I’m in the 155 to 165 range, I like to wrap at that point. I believe I went past that mark on this cook because I left the house for about four hours.

      JAMES MOORE It is massive, you can put up to 12 briskets on it at one time. My thoughts were around catering opportunities. Keep me in mind if you hear of any needs in the area. God bless!

      Dski Grillz I found slow roasting a 7 bone chuck or roast the same way as brisket comes out so excellent and cheaper on the pocket! Maybe you can try it on a future video because of the number of the roast that you can get won't add up to the cost of the brisket

    Great video, but you turned off the camera too soon. I wanted to see the part where your wife grabs a cleaver and chases you around the kitchen for ruining her good towel. But seriously, did you have to add more charcoal to go the full 12 hours?

      Mike O'Reilly The towel chase was not rated for UA-cam viewing..lol. To answer your question I did have to put more charcoal in to finish the cook. I’m currently testing out different charcoals to see which will give me the longest burn time. So far it looks like FOGO is leading the pack. Have a good weekend Mike!

      @@DskiGrillz, I thought you might have to. I agree with you about Fogo, but Jealous Devil is no slacker. I think the charcoal basket that comes with the pit is just a bit undersized for very long cooks. I've got a 13X13X8 basket on my Lone Star Grillz Adjustable Smoker/Grill and I can get maybe 10 or 11 hours out of it using Fogo Super Premium which has very large chunks. The other thing I've noticed because I use either a BBQ Guru or a Fireboard with a fan, just like the Ole Hickory has, it that the lit charcoal very quickly moves across the entire area of the charcoal basket, which you saw when you first pulled out the basket to put in smoke wood, and I'm not sure that the Minion method is possible when using a fan controller.

      Mike O'Reilly Hey Mike. Those are all very valid points. I just finished babysitting a 20lb brisket I did for a catering job and literally set my clock to get up in 4 hours because I wasn’t comfortable with being able to have enough charcoal to Power through the cook. As for Jealous Devil, it’s a toss up between it and FOGO. I really like both of them. Jealous devil is also $10 cheaper for the 35lb bag I by versus FOGO. Not sure what we can do to extend the life of our long cooks. I also tired using a chimney of lite coals and once I reached temp, I filled the basket with unlike coals, still I only got roughly 6 hours before I had to add more fuel....major dilemma! Let me know if you figure something out. Take care

      @@DskiGrillz Try some Binchotan Charcoal if you are wanting a longer burn time. Korin has a 33lb box for like $70. Ya, I know it is expensive but it will definitely outlast ANY charcoal on the market for "burn time" and heat. I have done several cooks with it and I STILL have charcoal remaining in the basket to use for my next cook...Plus, there is literally, little to NO ASH.
