    That Big Boy statue brought back some memories. As far as the smoker, they don’t mak’em any better. I will own one before I kick the grease pan. I’ve eaten off several and there’s just no comparison. Fine, fine piece of craftsmanship.

    One thing that I find humbling whenever I watch your channel, and other American channels, is how much home grown/USA industry you have and are quite rightly proud of.
    It saddens me when I look around the UK and see very little UK made products anymore.

    Great review on an awesome smoker. I have owed a CTO for about 6 years now and love it. No issues with it at all. I will give you an opinion on something. In my experience I like cooking with charcoal and baseball size wood CHUNKS added throughout with the gas on to ignite and assist. I think this method provides a cleaner smoke than the gas blowing on logs. To me the gas blowing on complete logs tastes a little dirty. You may find it to be different, but that’s my contribution to your adventure. You will definitely love the Ol Hickory.

    I had the opportunity to cook on a commercial one 20 yrs ago. I was too young to appreciate the simplicity and convenience. Fast forward to today. Helped cater a wedding. 20 briskets and 30 lbs of sausage. All the work was loading and unloading. Luckily i was only brought in to slice briskets. Easy money.

    Question about the physical placement of the smoker. How far away from the house should you cook with the smoker? I assume if you cook with the smoker up close to your house it may permeate the house with smoke? Or maybe it should be far away in case of some type of grease fire? How many feet from the house do your recommend?

Ole Hickory typically don't work with content creators, so I'm very happy they decided to work with me, and I can't wait for this extreme heat to end so I can fire it up for another cook and video.     What type of tool/machine do you use to cut your log splits to fit in that small firebox? Thanks for all of your previous help!

      It will hold full splits. It's not as small as you think. Some of these splits are around 18", but to answer your question, we use an ax to split the wood and we use a chainsaw to cut the wood to the length we want.

    I was familiar with this brand. But I thought all they made was commercial units for restaurants. So they make units for residential, interesting. I'm very curious to see how it works out. It's a sad day when I see restaurants using traeger cookers when they could be using "Old Hickory " cookers. I have seen some OH smokers mounted in the back of some foodtrailers.       Yes, that's exactly why I wanted to let people know that they do make residential models. I have owned a few Chinese pits in the past but I have gotten rid of all of them and I only own and use USA built smokers and pits except for my Fontana pizza oven.       @Smoky Ribs BBQ as to Italian manufacturers I agree, most are excellent. Cooking equipment especially. I love the BCS two wheeled tractors, amazing equipment. Anyway so what are you going to cook first? I'm looking forward to seeing what ever that is. Heck if I had a salmon fillet now I'd send it to you. My foot should hopefully be healed enough to get out for our spring salmon fishing season. I'll keep you and that smoker in mind. 🔥👍🎣🐟😋

    Good pit obviously capable of cooking some fine bbq, at least as long as you don’t use gas. Maybe this pit is different but my experience with gas smokers has been they produce very little smoke flavor.

      I do plan on using both the gas and also charcoal and wood for comparison reasons. For the record these pits put out plenty of smoke while using gas. The gas is mainly to start the fire and to rekindle as needed. Thanks for watching!

    Need a comparison between this pit and the LSG pellet smoker to see which produces the better smoke profile.

      I already know which one will win. That Ole Hickory is in a class of its own. Flavor equal or better than a offset, but the convenience of a pellet smoker, and very efficient. I'm passing my LSG pellet grill on to my youngest son.

      @@Pete_or_Peter4Long Technically you are burning wood, but it is gas assist which means the burner will come on when the temp drops below your desired setting such as 250F. The burner will literally only fire off for around 10 seconds and then back out. The wood is the source for the smoke and heat, but being thermostatically controlled, it will run itself. As an option you can use charcoal wood combination if you don't want to use gas, but gas is way more economical than charcoal but the option is there. I couldn't believe that flavor I got from that pit!

      I said the ole hickory taste like a offset smoker but has the convenience of a pellet grill. It’s super efficient on wood so 1 quarter split of wood will last up to 6 hours. If your brisket takes 18 hours to cook you will use about 3 splits. Can’t beat that!

      How does your chicken come out on this ? I saw one video, where a competitor said it does not come out as moist as he would like, so he uses GMG so his comp chicken. Condidering purchasing one, reason for the question

      The website says to contact them. Ole Hickory's are not cheap. I'm not talking about just the price either. It's really about the same price as many of today's high end offset smokers. There are even a few pellet grills that gets close to its price range. You will have to contact them yourself for a exact price. In today's world prices are changing daily with everything.

    Starting to hate BBQ competition. Smokers and grills should NOT be plugged in. It’s almost a baking competition. What happened to stick burners?! I understand home use but competition? Weak!

      I know what you are saying, but in today's competitions anything goes pretty much. Even pellet grills. I don't compete, but as far as great smokers go, this Ole Hickory outperforms any smoker I've ever owned including my offset. It's design lays smoke on meat like no other. There is no wonder why they are used in BBQ restaurants across the world (and competitions). These smokers definitely give a person an advantage. Fair or not.

    I have a Lonestar stick burner a big green egg and a Pitt&Spitts pellet grill. Would it be worth my investment for one of these grills? They look awesome. What is your opinion?

      I've owned and do own the LSG offset, and pellet grill. I have owned two Kamado Joe's and I still own a Pitts & Spitts flat top grill and I love them all but this Ole Hickory became my most favorite smoker out of everything I've ever owned!

      I just recently got the ace JW which is the cheapest one they have now and the prices are over $5000 for the cheapest one they have now I hear they raise them all almost $1000 in May. It burns wood and charcoal I like it so far but sometimes I wonder boy that’s a lot of money, but I’m sure it’s well worth it.
