Honey-Bourbon Glazed Bacon

Yield: 4 servings
Ingredients
1/4 cup clover honey
2 tablespoons bourbon
12 slices double-smoked, thick-cut bacon
Coarsely ground black pepper
Directions
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.

I've done this many times with bourbon, rum & whiskey. Honey works well with all 3. Comes out better if you flip the bacon before adding the glaze & use a wire rack.

My glaze did not come out as thick as what is showing in the video and the recipe seems to be having the wrong amounts of booze versus honey what did I do wrong
I always cook bacon in the MICROWAVE.
I am of Scottish heritage. Could I use SCOTCH for the glaze?
I think a good single-malt would work especially well.

Can you suggest a bourbon substitute as I’m not allowed to drink alcohol for medical reasons?
Tecnically the alcohol would be evaporated, but yeah vanilla extract might work with some brown sugar

I've been making Bourbon-Bacon for some time, by simply adding 2 fingers of bourbon to the meat in my cast iron skillet, (NOTHING ELSE!) and flipping once. Comes out tasty and crispy, the Texas way!
