I live in the Bay Area and there is a large Filipino community here, especially in Daly City. I’ve never heard a Filipino person speak with an British accent.

There are some foods that taste amazing and I’d give 10/10 even though it’s spicy.

yeah i agree.. they young girl has her own way of adobo the 3 older ladies did it pretty well.
however, just my take on it.
1. the egg should have been marinated with the adobo sauce. (should be brownish in color, not white).
2. i don't put carrots. if they want to add veggies maybe use sitaw(long bean).
3. the chicken is fine (not to be cut into little pieces).
4. i don't really drown my rice with adobo sauce, more of just coating it. so having the sabaw (soup) is not really a necessity for me when it comes to adobo.
the older 3 ladies know their adobo pretty well. 🍻👍
Yeah she judged the food base on her not liking the chili lol. Judge the food base on what you think how it turns out as adobo regardless of the spice level u cn only handle ahaha

The other lady has a point. It doesn’t matter how your food tastes as long as you, your family, your friends, or heck even your neighbours! If they love it, then what’s wrong with it? I think that every dish has one thing in common, it’s invention originated from love.

When I was in college, there was a Filipino girl who lived in the same dorm hall as me. On her birthday her mother came to visit and made pork adobo with cabbage and rice for the entire hall. Not only did she bring enough for dinner, but there was enough for all of us to take 3 nights worth of leftovers. It was seriously one of the most generous things i ever experienced. I’ve been in love with Filipino food ever since and adobo in particular warms my soul every time.

@@eduardochavacano MISMO! When i see filipino food online it’s always “lechon, adobo, lumpia, ube, and halohalo” which i think is a good introduction but i’m trying to see filipinos show more special/regional dishes or their interpretations.
All of my mom’s siblings ( Mexican) married Filipinos, all my 15 cousins are Mexipinos lol so I, a full blood Mexican really appreciates adobo and all of filipino cuisine 🫶✨

I love how supportive and non bitchy these ladies were. Also, adobo can be cooked stewy or dry. I tend to like mine on the dry side with a some spicy coconut dip on the side.
For those who don’t know, adobo comes in many form: soupy, dry, w/ bay leaves, w/out bay leaves, chicken, pork, long beans, water spinach, etc. There’s even a variant called “adobong puti” (puti = white). Instead of a soy sauce and vinegar base, only vinegar is used, which makes it white. That being said, I don’t think I’ve ever seen carrots in an adobo. I guess you can compare it to pinapples on pizza. I’m not saying that it’s bad, just that it’s not traditional. No one in the Philippines would put carrots in their adobo!
How many people would cook it in a slow cooker too? She really white washed the dish.

My mom is a Nicaraguan woman and married a Filipino man. He taught her how to make a variety of dishes: kare kare, pancit, kilawin, but my favorite growing up was her adobo. She would broil the chicken in loads of soy and used lemon in place of most of the vinegar. It was intensely salty and sour but it made the rice absolutely beautiful. It impressed my stepdad's sibling, who would put their own spins on it, one of his brothers added mustard even.

@@SenseiWuzi Unsure, I was young when he made it while visiting the US, although I imagine it was more granular than your average "yellow" mustard. It wasn't at all a dominant flavor, probably just used to substitute some vinegar and add some flavor. Probably less than a spoonful of that mustard went in there.

@@soph3273 Pancit is probably the easiest of those dishes I mentioned. Basically you cook up vegetables. I like: onion, snow peas, mushroom, carrot, and cabbage. You could also cook up some chicken thigh too. Boil up some short rice noodles and add that into the pan you've fried everything else in and season with garlic and soy sauce until everything is pretty well-coated.
By and large they were fair to each other, no suspiciously low marks, but as all the dishes were so different, and they all liked different aspects, I am actually still not sure what adobo is!
It’s just meat(typically chicken or pork) cooked with spices like black pepper corn, bay leaf, etc. and lots of soy sauce, sugar, and vinegar.
I've once heard someone remark that Adobo is more of a cooking technique than a specific recipe as the variants can vary by quite a bit and will depend on the region and family preference. The important ingredients are Soy Sauce, Sugar, Vinegar, Bay Leaf and Pepper Corn. The ratios on this vary a lot. I personally prefer mine with a very viscous sauce. 2 part vinegar to 1 part soy. Very little sugar if any. I like pepper in mine but I don't like the whole peppercorns so I prefer to grind before putting it in. Sometimes I'll put Coconut milk in too which is common in certain parts of the Philippines.
I've seen someone mention something in regards to Chili Con Carne that I think applies well to Adobo. "There's a thousand different ways and recipes that Chili is made. But once you've tasted it you know it's a Chili."
Agree! Filipino adobo is more a cooking technique than a dish. It’s basically “speed braising”., with flavor. The soy sauce and vinegar tenderize the meat so you don’t have to simmer it for ages.

i still dont get why you would put a whole peppercorn rather than at the very least cracking them up in the mortar and pestle. unless you cook the adobo for hours which is unusual, the peppercorn are just a bother.

I really like Mae and I'm happy she won, she only said good things about the other ladies' adobos and I appreciate that. I never had adobo with chicken and pork together tho but that's something I'm definitely gonna try. I think Analiza's adobo is the one closest to how I'd make it for others (super reduced) but I'd probably let the egg sit in the sauce for a bit to cure it and also have more sauce on it
“If the family loves it, that’s all that matters”. TRUTH!! My family only makes chicken (bone in y’all!) or squid (with the ink, people!). No pork. Then we add garlic and black peppercorns to the usual ingredients, and have lots of sabaw. Because you need sabaw to coat the rice.

I love seeing how people cook their adobo differently. My family puts onions and sometimes potatoes. I know bretman rock's family had put bell peppers in there's. I never thought about putting chilli oil in adobo!

1 medium yellow onion diced
4lbs boneless pork butt cut it to one inch cubes
4-5 cloves of garlic chopped
3/4 cup silver swan soy sauce
1/2 cup datu puti white vinegar
2tbsp whole pepper corns (put in tea bag if you don’t like them in food)
4-5 bay leaves
1 cup water…
That’s literally all you need
You forgot carrots, prunes and cheese
@@iLoveBoysandBerries nah man, when something’s perfect the way it is, you don’t mess with it. Brown meat on all sides in batches and set aside. Sweat onion in the pork drippings, add garlic and add the pork back in, stir in the soy sauce and vinegar, add the peppercorns and bay leaves, add water, bring to a boil. Reduce heat to medium low, simmer with lid on 30-45 minutes, stirring occasionally. Remove from heat and let cool for a few minutes so that the pork fat rises above the sauce. Skim the fat from the top and place back on heat, bring back to a simmer and stir in equal parts cornstarch dissolved in water until desired gravy consistency is reached. I find 2tbsp cornstarch to 2tbsp water makes the perfect slurry. Serve over jasmine rice.

We cook something very similar in Polynesia, pork marinated in soy sauce/oyster sauce on white rice 🍚 I'm craving it now!!
Actually, adobo is a technique in cooking. It came from the Spanish word "adobar" which means to marinate. Traditionally adobo has a more salty and vinegary taste to it because of the use of vinegar and salt to marinate the meat which during the Spanish era is common to store the meat, but nowadays adobo is sweeter than the usual I think it is because every home has its own variation to it. And I just wanted to add that there is a lot of adobo version, there is "adobong puti" which is white because the soup doesn't have soy sauce in it, and there is also "adobong tuyo" which is dry adobo it is because they simmer it until the soup evaporated and the fat of the pork is the only thing that is left, there is also "adobong dilaw (yellow adobo)", "adobo sa gata (adobo in coconut milk)" and many more. There are also adobo dishes for vegetables. To be honest Chantelle's dish looks like Menudo to me, especially the way she cut the pork and the size of it seems like Menudo, you just have to put liver spread, tomato sauce and paste, potatos, green peas, hotdogs, etc.

I'm also Filipino American, born and raised in Queens, NY and work in private equity in London. Doesn't shock me at all. If you travel a lot you'll see Asians with every type of accent.

I'm not going to lie, I would happily sit down and eat each plate of Adobo that was presented to me, and I'd probably rate all of these highly except for the one with carrots in it, though unconventional, it's something I wouldn't put in Adobo; I feel like it would take away from the flavour, in my opinion.

Didn’t mean to make a stir with the carrots 😅 I have had some similar before and with this is a version I found that I liked that add of a little crunch/veg to the dish. Slow cooking really helped tenderise the pork like crazy, I highly recommend!!! But noted, no carrots for next time - sorry guys 😂 I wish I put an egg in instead haha
Carrots are delicious in adobo, some people think they’re gordon ramsay and think that a single dish should be cooked only one way without any change at all which honestly makes no sense. Don’t feel like you have to restrict yourself to what the boring haters want.

I laughed when chantell said dont put whole peppercorns in your Adobo..the first and only Adobo that a co-worker gave me had tons of peppercorn, which I avoided but the food was DELICIOUS! Peppercorns have great flavor, I just don't like them whole. Biting into them can be intense lol

Fact, every home has their own adobo. Me personally I love the dry adobo where it's almost fried and the savory reduced sauce. But I still eat any kind of adobo coz it's too damn good!

I prefer chicken to pork adobo. I also add fried potatoes. This is a perfect way to balance out the sabaw if you find you added too much water

Outstanding Dish, My cousin Saaum was visiting my mom about 13 years ago and I was bumming around and smelled it to my surprise "Adobo"!" My mom fried the pork fat to a half Crackling texture and wok cooked the main dish together with it. "MindBlown".
I begged my mom to make it once more, I gotta get my Daughter to learn it she, like my folks loves Far eastern and Afro-Spanish food

Adobo doesn't need to actually have soy sauce. If you have tried Adobo sa asin that doesn't require soy sauce (popular Adobo dish in Bicol). Also, my mom sometimes put potato and green peas on her Adobo. She also doesn't use bay leaves. There is is Adobo sa kamatis which has tomato.

Yes! I don’t think many Filipinos even know adobo was originally made with coconut. Some provinces still make it that way. I’d love to try that version one day.
This is so interesting to know and makes me love this version a lot more. When i added gata to the adobo, it really changed the game for me with creaminess of the sabaw. Only thing is, I know it made the dish less adobo looking haha. Thanks for sharing this fun fact!! Love learning new things about our culture 😍
