    🍞Dough: water 192g / dry yeast 4.5g / plain flour 400g / salt 4.5g.
    🍞Baking method: Put the dough into a heated cast iron pan, cover with a lid, and bake at 250°C for 25 minutes. Then remove the lid of the pot, continue to bake at 210°C for about 12 minutes.

    🍞tips: Regarding the water in the dough, is it ice water, warm water or room temperature water? Very simple, judge according to the weather, room temperature, season. Generally speaking, use warm water in winter (generally not more than 35 ℃), and use ice water in summer.
    🍞In the middle of the second fermentation, put the cast iron pan into the oven in advance and fully preheat it to 250℃.
    🍞If there is no fermentation basket, use a large bowl instead: place a clean cotton cloth in the large bowl, sprinkle with enough flour, and put the dough into it to ferment the smooth side down.
