Hi. Yes, you certainly can add the ingredients / flavor mix-ins you mentioned. Matcha has a very strong flavor, so you will most likely need only a teaspoon or a little more, if preferred. As to the cocoa powder, you may need around 3-4 tablespoons, depending on how rich in chocolate flavor you would want it to be. You can add a tablespoon or two (or three if needed) of milk. Everything else should maintain the same measurements.
When I was a little kid, sometimes we would get danish cookies, only for Christmas time, and I loved them so much. Fast forward, a decade or more ago, I began seeing little cans of "royal dansk" at the supermarket. I was so happy to see them again, but was so disappointed with the texture and flavor; just regular vanilla cookies with the danish shape. All we can find now are imitation. Cake decorating isn't my strong suit, hence I'm not an expert on cake decorating tools. You can use a large open star piping tip with an opening of about half an inch. Others use Ateco 849, which is a closed star tip with a large opening for Danish cookies.

Definitely can't use Ghee in the place of butter... Butter has a lot of moisture in it that helps with the recipe not being too dry... Ghee has most of all the water and moisture removed

I couldn’t get this dough to pipe out properly. I bought the biggest nozzle I could find, but still it didn’t work. So I added some milk to make it pipeable, and then they lost their shape in the oven. They still taste good, but I had a helluva time getting them to work for me.😢
It can be tricky to get the dough to the right consistency sometimes. Add a teaspoon or two of milk, just enough to soften it a little, just enough for it to pipe through the nozzle. It should still be thick, though. I hope you enjoyed these cookies even though they didn't turn out as you wanted them.

The tins we get list coconut as an ingredient. Can you suggest how that can be added other than coconut extract?

I used a high quality piping bag. The dough is quite thick, hence a thicker piping bag is best. Hope this helps.

I couldn’t get this dough to pipe out properly. I bought the biggest nozzle I could find, but still it didn’t work. So I added some milk to make it pipeable, and then they lost their shape in the oven. They still taste good, but I had a helluva time getting them to work for me.😢
It can be tricky to get the dough to the right consistency sometimes. Add a teaspoon or two of milk, just enough to soften it a little, just enough for it to pipe through the nozzle. It should still be thick, though. I hope you enjoyed these cookies even though they didn't turn out as you wanted them.

Salted butter or not? I see salt is an ingredient added.
I use salted butter in most recipes, even if it lists salt as an ingredient. I find that it enhances the flavor of the cookies. But you can opt to use unsalted butter as a matter of preference. Hope this helps.
I pipe the dreaded way 😂 it hurts too much (carpal tunnel) to pipe this way.
In that case, do what is possible with your condition. Hope they turned out well.
