You basically had it right, she dies and then he gets caught in a blizzard with no food cause the early snow prevented his plants from producing, the hoot owl is a totem of death coming to get you and in his mind that’s the girl and wildfire coming to take him away from the burdens of earthly life

Since there are no mountains in Nebraska I interpret this to mean her spirit is coming down from the setting sun that's partially above the horizon. Also, the protagonist hears the owl outside his window for six nights in a row, which is a bad omen. Then, he sees the girl riding Wildfire towards him, and he rides off with her into eternity.

Just beautiful story telling. I was 8 when this came out and I always ball when I hear it to this day; the words make beautiful pictures in my mind.
Some people think this is a sad song I see it more as a tribute to the friendship that people form with their beloved pets…..
