Madras Curry Chicken | without Coconut Milk | 4K

  • This version of Madras curry is super convenient if you don't have coconut milk, or you have an allergy. Freshly grinding and toasting the spices brings out incredible flavor! Try it at home and you'll love the how easy it is to pull together.
    Recipe:
    1) Dry brine (salt) the chicken for seasoning and leave aside for 1 hour
    2) Make the sauce powder with fresh ground black pepper, course sea salt, cayenne pepper for heat, curry powder. Grind in a mortar and pestle to bring out oils for flavor
    3) Saute the chicken at med-high meat until golden brown
    4) Toast the ground spices until it starts to smoke. Then add pork stock (or chicken/veggie) stock as substitute for coconut milk.
    5) Plate and enjoy!

    Nice. I'd choose the coconut milk or veggie stock over the pork stock, personally. But looks appetizing!
