    I still say you should open your own restaurant Valerie. You are an amazing cook - and all done so efficiently and looks so easy (I know it really isn't but you make it look that way). Your boys better all marry good cooks, or they'll be running home to mama's for supper every night 😋 That meal looked so good!

    Next time you make this, try making the filling a little ahead and chilling it for a bit before you stuff the chicken. If the mixture is cold, it shouldn’t leak out as much while you’re sautéing. But it should still melt nicely in the oven. Just a suggestion. Love your content ❤️❤️❤️

    I always enjoy your videos...feels like a peaceful day in the mountains with a friend 😊 When I make stuffed chicken breasts I always pan-sear the meat first, then stuff with spinach mixture after. With this method the filling doesn't ooze out, but the chicken still gets nice color from the sear. Best wishes from Humboldt County, California.

    What a tremendously wonderful video Valerie. I am going to make the spinach filled chicken and I think chicken stuffing and a salad. Then with leftover spinach as a dip toast up pieces of bread and spread dip on them? It sounds delicious to me.

    Dinner looked delicious!! 😋 It's wonderful your boys will eat fresh cooked veggies! You're a good mama! Maybe one of these days you'll be feeding your scraps to chickens! 😊 I always think of Charlie and the Chocolate Factory when I hear scrumptious. I think of scrum-dilly-umptious. 😁 I have a simple chicken recipe all my kids liked. It's a pound cooked chicken, 2 lg cans cream of chicken soup, aldente boiled broccoli, 1/2 c mayo, 2 tbsp curry powder, 1 cup water I pour in pan after I cook chicken to catch drippings. Stir altogether in 13x9 leaving chicken & broccoli til last. Butter about 3 pcs bread, cut into small squares and put on top layer, butter side up. Bake 350 30-35 min til bread is toasty golden brown. All measurements can be adjusted to your liking. Have a lovely week! 🌸🌅😊

    Valerie, sear the chicken before you stuff it. Slice open and season it, sear both sides quickly, then let it cool a bit before you stuff them.

      @@sallydunbar1683 it does help to firm up the meat. It’s easier to stuff and holds the stuffing in better if you’re not using skewers or toothpicks.

    My husband just asked me why we’re eating so much chicken, lol!!!
    Same thing here in south eastern Va. Walmart did have pork chops on sale here this past week but they didn’t look like much and still pricey. Not with this crew. I’m trying this chicken recipe and that filling looks YUM!
    That view never disappoints. Must be heaven to sit with your honey and look at that each night! What a wonderful blessing!

    You should use oven grade twine to wrap around the chicken before frying to hold it together..like they use on beef roasts.this might help when frying them.

    Valerie, if you have Sam’s Club close by, they have best price for fresh meat. Eye of the round roast is $4.88 a pound, chicken tenders or breasts are less than $3 a pound, pork loin, pork chops are below $3 a pound and even bacon is a good price compared to other grocery stores. Ground beef is best purchased in the long clear tubes, cheaper per pound and not over ground. Hope you have a wonderful week!!

      I do enjoy cooking, but I don't cook like that every day. And oh yes, mam, I have several days where I haven't felt like cooking, so we usually end up with takeout or we eat a lot of hotdogs. 😅🤣

      I'm using a rice cooker. I see how you could have mistook the rice cooker for the instapot because I do it all the time. I haven't made rice in the instant yet, so I'm not sure about that one. 😃🌻

    Try browning it on both sides first and then stuff it and put it in the oven. See how that works.

    Try tying a little twine around your chicken like when you stuff a roast and tie it up I think it might work a little better for ya I'm gonna have to try this chicken It looks and sounds great...

    If you make a little log of filling, slightly freeze it just to hold its shape, then use that to stiff the chicken, after searing, it shoukd hold up better. I agree twine or toothpicks to hold it together. Try chicken kiev. My mom loved to make it and it was delish. Also, try Poppy Seed chicken. Its delish!!

    Definitely trying the chicken recipe. Looks farely easy and good. Do you ever make chicken in a stir fry? I eat a lot of different meats in some form of a stir fry recipe. Once everything is cut up it's pretty fast to cook. Goes great with rice, noodles or by itself.

    Don’t split the chicken so long. Make a shorter cut, stuff it, then use toothpicks to hold it in. If you have a longer, thinner knife you could try to make a tunnel in the chicken and stuff it. ❤

    I’ve been doing that for a while too giving my food scraps to my vermacomposting worms another thing you can do is start making compost tea by throwing your scraps in a plastic container with water

    Everything looked so good.i like to take chicken breast.put in a big long dish.vut up potatoes and carrots and onion.cover with cream of chicken.or cream of mushroom.cover and bake 355.until.have rice seasoned up with butter salt and pepper.take the gravey it makes over rice.drpending on how many chicken you use.2 or 3 cans of which ever can creams you want.i put a lil butter in with the chicken too.hope you try it .❤

    Valerie, your supper looked so good. I am going to have to try and make that. Our household of 5 eats a lot of chicken, too. My family likes my simple version of chicken fried rice. ✨️Here is the recipe: 5-6 cups leftover cooked rice, 2 cups frozen diced rotisserie chicken, 1 cup frozen mixed peas and diced carrots, 1/2 cup of corn, 1 cup chopped cooked broccoli florets, 1 medium Vidalia onion diced. In a large skillet, on medium heat, pour 2-3 Tbsp. olive oil, diced onion, frozen diced chicken, a dash of pink seasalt, and freshly ground black pepper. When chicken is warmed and onions are translucent, add frozen peas and carrots and heat until warm. Then add broccoli, cooked rice, sesame oil, soy sauce, onion powder, and garlic powder. Stirring consistently until all ingredients are heated through then push everything away from center, and add a little more sesame oil. In a separate bowl, scramble 2 eggs and pour into the center of the pan. Keep stirring the eggs until cooked, then mix into the other ingredients. Adjust the seasonings, soy sauce, and sesame oil to your taste. Finish with a half stick of butter, let it melt, mix, and serve. I top mine with chopped spring onions and a little more soy sauce. Valerie, when I make this, it is usually because I already have leftover rice and leftover broccoli in my fridge. I also buy whole rotisserie chickens from our deli, and I pull all the meat off the bones, dice, and place 2 cups diced chicken in each freezer bag. One chicken usually gives me 4- 2cup bags. I use this chicken meat for the recipe above along with chicken and rice soup, chicken Alfredo, chicken fajitas, chicken and dumplings and many different chicken casserole recipes. It just makes my life so much easier and makes our food go a long way and our money, lol! Sometimes, for a special birthday or something, I'll fix spring rolls, fried noodles, and cheese wontons to go with our chicken fried rice. Have a beautiful, blessed day. 🙏

    Hi Valerie You can try using string for cooking. You can tie it with a twirl and then you won’t lose your filling. In Puerto Rico we use it a lot when we need to keep stuffing in the meats. Try it next time around. Sure looks delicious!

    Consider freezing your veg and chicken scraps. I keep big bags in the freezer and make the broth in winter. So much better than the commercial stuff. Watching from Northern California,

    Have you considered searing the chicken first, let it cool a little, and then stuffing it? That might be a good solution. It's worth a try.

    Love the stuffed chicken breasts. I have made this many times before. I never pre-seer the chicken tho but if you want to keep the stuffing from coming out just get some poultry string and tie the breast to keep it closed. I do that when I do my stuffed turkey breasts cause they are so big they have to be tied to stay together. Enjoy your meal. can't wait to see what you cook next.

    Some bread crumbs in the filling may keep the filling from running out when cooked.

    Looks amazing...and so colorful❤ one of our favorite chicken recipes is chili lime enchaladas. They have honey in them ...omg...they are so good.
