  • So today I thought I would share some of the comforting meals I eat in winter and hang out with you all. I'm excited to share minimalist, sustainable, zero waste and fun holiday season themed videos with you all!

    2 medium red onions (or use what you have)
    1 celery stick
    4 sun dried tomatoes
    1 sprig fresh thyme
    3 sprigs rosemary
    2 medium carrots
    500g mushrooms
    2 tbsp tomato paste
    1 tbsp miso (or marmite)
    1 tbsp balsamic vinegar
    250ml red wine
    100ml veggie stock
    2 cans of black lentils (400g x 2)
    4 russet potatoes
    vegan butter
    oat milk
    mustard

      We don't sell veg suet but the closest you get get to it would be vegetable shortening such a Crisco brand. I do order from British Corner Shop once a year to stock those hard to get items here. You can find some on Amazon but they will inflate prices. You can ask family to send you some as gifts too. Your food looks so warm and comforting xxx

    I liked how these two meals are so similar because usually the amount of ingredients I buy at the store are more then what’s needed for one recipe.

    I'm not sure how it compares to suet, but to my understanding solid vegetable shortening is very similar to vegetable suet. Crisco is the common brand of shortening, but there are others that are more eco friendly and transparent.

    Pop into Meijer when you're back in Michigan. They usually have Marmite in their international aisle. Otherwise World Market has it. I try to be very conservative with buying British imports, but having certain flavours incorporated into my meals occasionally keeps me connected to home. Especially important this time of year.
    Also love a good sheperds pie. I sometimes swap lentils for a beef-less ground beef from trader joes that is surprisingly cheap. It feels super hearty.

    I love hearty comfort food… and I love weekends. Vlogmas 8 is just in time for my meal planning for the upcoming weekend. To me… comfort food is home food. We have a root cellar full of home-grown potatoes, and these recipes are just perfect for our style of cooking. I also want to let you know, Immy, that I am a mushroom fanatic but my partner, historically, was not hugely fond of them. However, I have made many of your mushroom soups, stews, lasagnas, and other mushroom recipes and I am happy to report that he has loved them all. Speaking of love… I love Vlogmas so much and I love reading all the comments and chatting with like-minded, planet-kind, inspiring, and interesting people right here. Thank-you for this!! 💦🌎Ⓜary💕🥣

    It's ok that the recipes are similar! They both look delicious! I started a new part time job this week. Of course I'm tired because it's a new routine for me. I really want to embrace make ahead meals for the week (so I'm not tempted by take-away food!). I'm def going to be making one, if not both of these recipes!

    Have been very much needing this. Moving house to about 4 hours away from where we are now in like 3 days so everything for us is in chaos. Can't wait to get back to being more routined and doing meal prep again rather than just trying to eat what's in the freezer!

    I use vegan butter to make my dumplings. Nice and cold out of the fridge so it’s easy to rub in x

    It all looks delicious. I think you can use vegetable shortening in your dumplings. It's in the baking isle at the store.

    Kroger or Fred Meyer usually sells Marmite if not in store than online...it's expensive here in the states.

      Vegetable suet is probably closest to Crisco or vegetable shortening usually they have palm oil though

    Your vlogmas videos have been great and I love seeing you cooking some great winter meals I made cottage pie which is like a shepherds pie and pot pie together very hearty and delicious but inspired but a mushroom soup you made😍

    Hey Immy, I just wanted to say that when it comes to making those huge, dreamy, cloud-like dumplings that you mentioned, I sometimes use your recipe and I sometimes use my Mom’s recipe. We do not have vegetable suet here in the wilderness of northern 🇨🇦 so I just use vegan butter instead and they have turned out fluffy and delectable. And now… back to doing my report cards. 💦🌎Ⓜary💕⛄

      @@gretas6794 Hi Greta, thanks for asking. I’m happy to tell you a bit about my teaching experiences. This is my 36th year of teaching high school in northern 🇨🇦. My degree is in Human Kinetics and I taught PE for about 20 years. I loved it but, as you can probably imagine, after many years in sports and fitness, the wear and tear on the body caught up with me. I then became a Guidance Counsellor and taught Career Ed for a while, and that was OK but not totally my thing. Twelve years ago I found my way into teaching high school sewing and that has become my passion. Kids love to make stuff, and they love to learn valuable life skills such as sewing, repairing their clothing, and upcycling. Another great thing about teaching sewing is that most kids now-a-days do not have hobbies. Many of my students have gotten a sewing machine as a Christmas gift or Grad gift and they have continued to enjoy sewing at home as a hobby. Teaching has changed a lot since tech came on the scene in the 90’s… battling the phone addiction is one thing that challenges many high school teachers, including me. The vast majority of my teaching career has involved teaching hands-on and/or activity based subjects which, for me, is preferable than teaching in a classroom with desks. I have found that teaching is all about building relationships. If you’re a ‘people person’ with lots of energy and you have a passion for a subject, teaching might just be for you. Also… having the summers off, as well as time at Christmas and Spring Break, is pretty darn awesome!! I hope this lengthy ramble is helpful and/or interesting to you. I think someone already said it, but a substitute for vegetable suet is vegetable shortening, which is widely available.     I've been enjoying Vlogmas so much! All of your videos are beautiful and calming and so... real. The stew you made is one of my favourites, and I'm all for the Field Roast sausages too (especially the apple sage ones, yum).
    Also, I recently read "The secret life of bees" again and it's such a touching story!

    I enjoy cooking what I call stoop during the winter months it's a combination of stew and soup in terms of texture. I usually avoid potatoes and dumplings and stick to hearty vegetables and meat.

    I am loving your vlogmas posts! I am going to guess that you can substitute vegetable shortening for vegetable suet. I think they are roughly the same thing. And you have inspired me to make a vegan stew for tomorrow's dinner!

    I hadn’t heard of vegetarian suet so looked it up. Sounded like crisco to me and, sure enough, a substitute suggestion I found was to grate crisco in. Hope that helps.

    Hi Immy, I haven’t found a good English Shop in Denver so I purchase things like Marmite and Vegemite from Amazon. There are a couple of good Asian markets, H Mart in Aurora on Parker Road (it’s huge, has a wonderful variety of veggies, and is super just to wander around) and Pacific Ocean Marketplace. There is also a good Middle Eastern Market near the H Mart on Parker Road called Arash.

    I’ve been enjoying your channel for a while now. I think I found you thru Shelbi & Madison, and glad I did. I find your videos interesting and inspiring. I also find your voice quite calming. My initial interest was the sustainability aspect but over time, I’ve come to enjoy all your videos offer. I’m not vegan - I eat mostly vegetarian - but these recipes look and sound delicious! The question that prompted me to comment is, What kind of knife are you using and where did you find it? I love cooking (and gardening and reading), and I have a set of Wusthof knives but, unfortunately, we don’t have good knife sharpening services here in Thunder Bay, Ontario, Canada, and they’re fairly dull. The knife you used looked nice and sharp. I’m happy you’ve finally made it to the U.S. to be with your partner, loved the elopement, and am anxious to see where the next chapter of your life leads you. Keep up the great work. Glad I subscribed.

      Just a suggestion… have you thought of sharpening your knives yourself? I have a several high quality knives (including a Wusthof knife) and years ago I figured that since a knife is something I use multiple times everyday that I should learn to sharpen them. (We do not have any knife sharpening services where I live in the wilderness of northern BC.) A sharpening steel is used to sharpen a dull knife and a honing steel is used to hone the edge of a sharp knife. I own a sharpening steel, and I will say that it was not cheap but I’ve had it for decades and it works great every time. A sharpening steel can be made from a variety of materials including ceramic, chromium, or diamond (the most expensive). The correct angle for sharpening most knives is between 17º - 20º. I’m pretty sure there must be hundreds of UA-cam videos with excellent tutorials. Once you get used to having a sharp knife, you will love it. Knives also tend to “fish hook” on the end with regular use, and sharpening them regularly will prevent this from happening. With all this said, I, too, am quite curious about the wide blade knife that Immy was using at the beginning of the video. I’m not sure if all this sharpening steel info is helpful to you… it’s just a suggestion. A lot of people are intimidated by knife sharpening, but tbh, it’s quite easy and fairly straightforward.     For the dumplings I'd recommend trying Miyoko's Brand Vegan Butter. I've found it to be really reliable for that kind of baking!

    The one place I've been able to find marmite and vegemite in person here in the US is World Market.

    I really don't think it's a big deal to make similar meals. Seeing how you can take the same ingredients and make different dishes is really helpful actually. Someone asked me the other day what I've been having for dinner this time of year and I said, "Some protein and roasted veg."... and then I realized... yep, that's what I've eaten several days in a row now. And mainly because I eat seasonally and that's what we have now. I've been trying different spices on the roasties to vary it up though and that's been fun experimenting. So... keep 'em coming!     Check it to be sure but I believe that a good replacement for vegetable suet here in the States is Crisco (blue can).

    I usually don't put Marmite in stews etc but put in Worcestershire sauce instead. I'm in UK so I have no idea if that is any easier to get hold of? When very broke at one time I had no Worcestershire sauce so I used a spot of dark soy sauce. Thanks for the recipes etc when there is so much going on in your life!

      Hi Lyn: I also use dark soy sauce in all kinds of cooking when I need a flavour enhancer. I also use apple juice for sweetness, and coffee for earthy richness. All of these are so handy to add because they are readily available in my kitchen. Dark soy sauce is super versatile. Greetings to you from 🇨🇦. Ⓜ️ary

    Beyond meat sausages are way better. I like the spicy, but the other are good too. Seriously so similar to the real thing. I also use them in a whit bean and kale vegan ‘Tuscana’ style soup. Yum!

    I love vegetarian/vegan Shephard's Pie😋! Though I haven't found a good, energy-efficient way to reheat leftover pie. I need to try out different settings of my oven... I managed to convince my mother to spend Christmas day at my place (Our main celebrations take place on Christmas Eve!) so she can relax a bit more. Shephard's Pie is one of my options to cook. Though right now I'm leaning to Mushroom Risotto as this recipe is tried and tested with my family and I'm unsure whether they would like Shepherd's Pie.
    Anyway, I plan to meal-prep a kale stew on Sunday (1 onion, roughly one half kale (I use frozen one) and one half potatoes, some milk and butter, salt, pepper and nutmeg). It's very comforting and warming in the cold.

    Thank you, Immy, lovely video as always. I would like to add a book suggestion, perhaps you've received this suggestion already, it's-- BREATH The New Science Of A Lost Art by James Nestor. It's a New York Times bestseller, and I'm learning so much about the power of breathing. I'm a yoga teacher, so breathing is not a lost art in Yoga, it's called Pranayama (breath control.) But this is a scientific look at how breathing affects our whole being, mind, body, and soul. I'm still reading it, it's really a great read, and I'm recommending it to all my classes. Also, you will love Colorado for all the amazing outdoor opportunities it holds. So much to do outdoors there. Colorado is always in the top 5 states for the healthiest people in the US and it's often #1, because outdoor physical exercise is a way of life there.
