  • I will be try cured yacon for the first time with you on camera! This has became my favorite root vegetable and will be growing them every year. I will also demonstrate how easy it is to split the crowns to grow more plants.

    I grew yacon last year in large containers. There was one rhizome that I left in a seedling pot and then neglected. To my surprise it still produced perfect, albeit miniature, yacons that were just as delicious as the ones that had more sunlight and more space to grow bigger. My yacons were light tan brown colour with pale straw yellow flesh that tasted like sugar cane and were crunchy and watery like radishes and apples. Will definitely keep growing them because they're so easy to care for and so tasty.

    TY!! I just found yacon in a gallon pot at a favorite natural food grocery at the beach (Lincoln city, OR) and am excited to have it again!! There are several shoots, so I'm going to see if I can divide it 😃
    I'm thinking of grow bags 💚 🌼 💛

    Try jicamas same they are a vine yes the vines and seed are toxic but you do eat the tubers good as yacon lots of fiber and water crispy treat

      yes but jicamas arent nearly as sweet as yacons, I do love jicamas for the crunch. But its not the same

    I can't tell if you are eating the peel. Is it better to eat or remove the peel? I agree raw is best...

    If you reduce that flesh into a syrup, it is a 1 on the glycemic scale as a sweetener.

      I did this with mine, because they were ripening too quickly. I made the mistake or rinsing them before stocking them. The syrup was was amazing! I juiced them in an extractor and reduced the juice into a syrup. The pulp was aslo delicious. The syrup lasted from months in the fridge.

    Great video. Thank you. New veggies to grow, I'm excited. Anyone have any thoughts on growing these in a Ruth Stout bed. I started a new raised bed with this method for potatoes and was thinking of adding this to my selection. Take care everyone.

    Hands down the best way to cook them is to roast them, it concentrates the sugars even more, almost like nutty, caramel.

      After you grow it once, there should be plenty of crowns to divide for the following year. Happy gardening! :D

    Thanks for growing AND eating the Yacon. I just received 2 plants and getting their bed ready to plant tonight. I can't wait to eat and propagate. Good idea not to cook but to eat as a snack or maybe in a salad.

    The bark must be completely removed before eating. Can be made into food in many ways, can be made into syrup, boiled soup, eaten raw, dried, brewed as a tea, freshly squeezed, drinking is delicious.

    Hi Wendi, so i have been noticing there are white and yellow yacon. Which variety is the yellow one do you know? I dont know how different they taste but i would love to grow both

    How do they fare in tropical lowlands? Am looking for some to plant. Also, since it's always hot and humid most of the year, how do I cure them? In the fridge?

    It sounds like you are implying that cooking destroys the prebiotic fiber in yacon - it does not.

      It would destroy the enzyme content but yes, not the fiber.

      BangtanBangtan BangBangtan check out my previous episode on harvesting Yacons I linked below this video. It talks about growing these. In general I grow most things in rich compost and worm castings. Growing them in more sun this time in hopes they will produce more tubers. Happy Gardening!

    I always get a worm down the stem of my YACON plants end up having to dig it out and redo my plants before the tubers ever get the size I like them. I did get a good harvest the first year I grew them. Wendi have you ever had that problem?

      It was my first time growing yacon and didn't have that issue luckily. What kind of worms are they? I think worms usually only eat what's decaying? Anyone have some advise?

    I just check your website and the seeds still available. Will be able to start growing or will it be too late? Im located here bay area cali.

      Hi Julian, I would get any of these plants growing ASAP. Luckily Bay area frost date is pretty late in the year. Best to grow plants in full sun for maximum tuber production. Sunchokes take 4-5 months to grow, and yacons take 5-6 months to grow. Sunchoke is more sensitive to the cold than Yacon. They will die back way before yacon. For zone 10 (So Cal) My sunchokes start dying back around November, and yacons start dying back in December. It doesn’t get cold enough that I have to rush digging them up since we do not get a frost usually. Hope this helps!

      michelle belle I would check online sellers. I have seen nursery in Nor Cal carry them. White yam is available at Asian markets you can try to sprout. Ube...be sure to catch my upcoming episode! Hope I’ll be able to offer any extra tubers I have in the future.

    Es esto lo mismo al boniato?? Is it the same as sweet potato which is harvested in Spain, Cuba and other countries of America ?

      Rafael Garcia yacon is very different than sweet potatoes. The plant looks nothing like sweet potato, tubers taste different too. :)

      Is in the sunflower family (Asteacea) like sunchokes, and will likely have small happy yellow flowers 🌼 💛
      The leaves can also be eaten small or used as wraps 🍃

      Some do peel it, but I don’t since the skin is full of nutrients. Skin of yacon, like some fruits, it’s not as palatable to some people.
