CRAWFISH BOIL
1 (63 oz) Container of Seafood Boil Seasoning
1 (26 oz) Container of Salt
1/2 Cup of Liquid Crab Boil
1 (8 oz) Container of Spicy Cajun Seasoning
6 Yellow Onions
6 Heads garlic
6 Oranges
8 Lemons
1 Bunch of Celery
1 lb of Carrots
1 lb of Whole Button Mushrooms
3 lbs of Small Red Potatoes
2 lbs of Smoked Sausage
12-24 Frozen Half Ears of Corn on the Cob
1 Sack (35 to 45 pounds) Live Crawfish
*Optional Items*
Boiling Bag for Fixings
Asparagus, Cauliflower, Brussels Sprouts
Frozen Tamales
Cayenne Pepper
In a 100 qt pot, fill to the half way mark with water.
Turn the burner on high.
Cut the Onions, Garlic, Orange and Lemons into halves.
Cut the Celery, Carrots, and Sausage into 3-4 inch pieces.
With the basket in the pot of water, squeeze in all Lemons and Oranges.
When the water looks like it’s at a slight boil, add the 26 oz container of Salt and the 63 oz container of Seafood Boil Seasoning.
Stir, cover and let get to a rolling boil.
While that is heating up, you can working on rinsing rinsing the crawfish by dumping them into an ice chest, spraying them, and letting water drain. Keep doing this until the water looks clear.
Once you've got the pot boiling, you're going to put all the Onions, Garlic, Celery, Carrots, Mushrooms, Potatoes, and Sausage into a boiling bag, and drop into the pot.
Cover, and let that boil for 20 Minuets.
Other fresh items like, asparagus, cauliflower, and Brussels Sprouts; you’re going to want to add to the bag with about 8 minutes left.
When the 20 minutes is up, remove the bag to a tray on the side. Let it drain for a moment, and then dump the fixings into a couple other trays.
This will make you a great host as your guest can munch on this while the crawfish cook.
Next remove the basket from the pot and discard the Lemons and Oranges.
Put the basket off to the side, and add the 8 oz container of Spicy Cajun Seasoning.
You do this because all the fixings have soaked up much of the initial seasonings.
If you like even more kick, add cayenne pepper.
Make sure the pot is still at a good boil.
Add the crawfish to the basket, and slowly drop the basket of crawfish into the pot and cover.
Boil for 3 & 1/2 minutes from the moment you drop in the basket and cover.
Once the time is up, turn the burner off and let the crawfish soak for 37 minutes.
At this time, if you have frozen tamales, be sure to individually wrap them in foil, slightly clamping the ends.
With about 30 minutes of soaking left, add the frozen corn and frozen tamales. Doing it this way will cook the frozen items to a great consistency.
Furthermore, the temperature will drop, which will prevent the crawfish from overcooking, yet still allow them to soak up the seasoning.
Be sure to stir the bottom to the top every 10 minutes.
When the time is up, pull the basket up from the pot. Hold for a moment as remaining liquid drains back into the pot.
Once you barely see anything draining from the basket, dump crawfish into a clean ice chest.
Be sure to have something that slightly props open the ice chest so that it doesn’t completely close.
You don’t want them to overcook in there.
Have a large scooping spoon and serving trays available so people can serve themselves a desired amount. Enjoy! 😊

Did a variation of your recipe the other day and it was turned out great, added two more oranges and a couple more lemons, used the Louisiana brand dry seasoning, which comes 72 oz. To a bag, so when I added the salt and seasoning I didn't add the whole bag, I boiled the fixings first just like in the video, then before the crawfish I added the rest of the bag of seasoning and added a touch more of the liquid boil, everything came out great even though it was my first time boiling crawfish.

Apple cider vinegar and butter always in my boil to help firm up that tail just right to slide out. Not overcooking helps too. Fresh shucked then frozen corn is the best. Trying the tamales next season for sure.

So I did a crawfish boil yesterday and I did it on a buddies new cooker outta Texas, expensive state of the art cooker for large quantities / serve a crowd type cooker so I was out of my comfort zone of my personal 102 qt. stainless where I always achieve magic , been cooking on it for 15 years / did the math and crawfish came out great on his new cooker......I used your adding the corn to the soaking process with ice too because I season well but I wanted to give you props cause people commented positively on the corn too.People always say that this is the best crawfish I have ever tasted but never about the veg. I will say it was the best corn I ever cooked at a crawfish boil.I do not want you to take this compliment lightly ninja master only because I can make crawfish as good if not better than you but your videos are the bomb homey and I love your channel. Purging is for crab....washing is for Crawfish.....great video! One time try a pineapple...cut top and bottom off and cut like you would a loaf of bread....sweet and spicy...amazing to eat some Crawfish then every once in awhile grab a pineapple piece to take the sting off!

Hello Cajun Ninja. If I’m incorporating the boil boss to cool the crawfish down, should I increase the boil time from 3.5 minutes and/or decrease the soaking time from 37 mins? Wanted to get your opinion on this.
