- DDG Services bid on an auction item for me to go cook for them. It was unanimous that they wanted a shrimp and crabmeat stew. Not to be confused with gumbo. A stew is often thicker than a gumbo. You can find this one in my cookbook at cajunninjabook.com

Consistency. A traditional south Louisiana gumbo will have more of a soup like consistency. The stock will stand out more, whereas with a stew the roux will stand out more. A stew will be more like a gravy.
