    1.5 lbs Dried Cannellini Beans
    2 cloves Garlic
    3 Bay Leaves
    1 Tbsp Salt
    1 lb Small Shell Pasta
    Sprinkle Grated Pecorino Romano Cheese on Top
    *Vegetable Mix:
    5 stalks Celery - chopped
    2-3 large Carrots - chopped
    1 large Onion - chopped
    3 cloves Garlic - chopped
    1/4 cup Olive Oil
    1/4 cup Fresh Parsley - chopped
    1 cup Peeled Plum Tomatoes
    2 Tbsp Salt
    6-8 cups Water
    GINA's FATHER's FAVORITE DISH:
    1-2 cups Cooked Cannellini Beans (prepped)
    1 clove Garlic - chopped
    1/4 tsp Oregano
    2 tsp Extra Virgin Olive Oil
    3 slices 2-day-old Italian Bread
    1/8/ tsp Hot Pepper Flakes (optional)
    BEANS with CABBAGE:
    1 head Savoy Cabbage
    2 Tbsp Olive Oil
    3-4 cups Cooked Cannellini Beans (prepped)
    3-4 cups *Vegetable Mix (above)
    Sprinkle grated Pecorino Romano Cheese on top

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera?
    Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
    Does Gina read the comments?
    We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    I love the fact that Gina doesn't use the latest and greatest gadgets. She doesn't have a $400 KitchenAid stand mixer; she uses a hand mixer. She uses regular kitchen bowls instead of the hoity-toity bowls that cooks on The Food Network use. Gina is so down to earth that she makes me feel more comfortable about my own cooking imperfections. She cooks like my Mom and Grandmom used to cook. Now, I only ever watch Gina; I have ceased watching anything on The Food Network or cooking shows on PBS. For me, it's Gina all the way! I wish she could adopt me!

      Everyone who loves to cook should have a Kitchen Aid mixer, and if family wrote to them they would most likely send her one. I laid mine away at the local department store; it must be 25 years old and no matter what new piece they make it will fit my mixer. That said, I have cooking utensils that are over 50+ years old; I toss them in the Salvation Army/Goodwill box then go to the garage and dig them out again. No offense meant.

      I agree with Ms Giansante. I adore her and her cooking. So Earthy and comfy. And no fancy gadgets. I only worry about her using her chef’s knife in a manner where she moves the blade “ toward “ her hand holding the onion. One slip, and she’s off to the ER. But she is confident and precise in how she cuts the onion. Please be careful, Dear Gina!❤️Marco Pellegrino

      My own grandmother never had any fancy gadgets, most from that generation and back did not. Yet they cooked and survived, and the food tasted great, satisfied and nourished the body. Some modern gadgets are nice, but I could make it without them and still serve great meals. Gina cooks with love and that is hard to find today.

    Im an Irish boy who grew up on an Italian block in Queens, NY. You remind me of all my friends' mothers. They taught my mom how to make all the Italian classics. How I miss those good old days.

    Love this woman because she radiates and spreads love through her cooking. As for the people who give her thumbs down, I’m 100% sure, grandma Gina couldn’t care less about them. I can hear her say, “It’s ok, some people like my cooking, some don’t, it’s ok. This the way I do it, some other people do it another way.” Grandma Ginna is unable to get angry to anyone, no matter what. You keep cooking your amazing dishes, grandma Ginna.     I love her story about her father. It really touched my heart. Hard working man comes home hungry takes unfinished bean soup, seasons it up and his own way, grabs some crusty stale bread and digs right in. Yeah I see how he managed to be happy, he was a practical man.

    I just found these videos a few days ago and have watched several. In this one Gina says “Mangia Mangia”...And I got immediately teary-eyed as I thought of my own Italian grandma and how she used to say that as we would sit down to eat together at her table. All of these amazing recipes are ones that we have prepared for years in my own family. I so appreciate your videos...they bring back memories of my own dear Grandma who I know waits for me in heaven 💜

    Gina is the best! She made me feel better. I live in NY and the Italians here pronounce it Pasta Fazule. Today, while I was with my client, her daughter took out a container from the freezer for her mother to eat and it said Pasta Fagioli. I told my client, your daughter took out some Pasta Fagioli for you for dinner. I pronounced it like Gina did and I was quickly reprimanded... Pasta Fazule!! Now I hear a REAL ITALIAN SAY IT CORRECTLY so guess what? I am saying it the way Gina says it! HAHAHA! I can't wait to play this video for her! 😜

    The beans, they a crrrack!! I can watch her all day. I was an Irish kid living on an Italian street. I used to knock on the doors for meatballs and snacks. I loved that neighborhood.

    Dearest Gina, I made this today. My husband said it was the best he ever had. He did not even add pepper and said it was perfect the way it was. I did not have any home canned tomatoes, so I used canned crushed tomatoes. Thank you again for teaching me how to cook Italian food like a pro. Love to you all from North Carolina!

    As a mountain girl from the USA - I always soak my beans the night before and then rinse them. I use the water from the rinsed beans and put out in my garden. It is a good starch and protein for my plants and nutrients to nourish.

    To the family members (especially the grandchildren) my hope is they know what a treasure they still have on this earth with them ... i just found Ginas posts, and I'm 66 and reminds how i miss my parents when she talks about her parents.     I learned that in Italy each village,regions & area have small to huge variations of dishes are prepared.
    I haven’t given up looking for recipes the way my mom make stuffed peppers (no meat or rice) and Prosciutto bread it’s like looking for a needle in a haystack.

    Made this today and my husband and I loved it! Soooooooo good. I can't get over the flavor and no beef or chicken stock is used. Thank you!. I will make this again and serve my husband the beans a little olive oil and hot pepper flakes with homemade bread and a glass of wine in honor of you father, Gina. We too love you and your family stories and especially when you sing. I send big hugs and love to you and your family for sharing your wonderful dishes with all of us. I always say if you want Italian food that tastes good go directly to the Italians for the right way to make it. You have never let me down. My last name is Pasquini by marriage so I try to make food that lives up to the name. There are no family recipies passed down as my husband's mother was Irish. So you are my stand in mother in law. I am 71 yrs. old and I have many recipies to pass to my sons now. I have one son who makes his own Pasta and 2 who make woderful bread.

    I cannot love Grandma Gina anymore than I do! She is the real deal. The way she talks, what she says, the hand motions, the stories... reminds me so much of my grandma - who did not have an Italian accent- BUT besides that was everything the same as Gina when she cooked. Thank you for sharing the love.

    Gina I love your videos. It’s like sitting in the kitchen with my grandmother, which I didn’t get to do very much. She was from Italy, in Campania, not far from Faeta. Thank you for sharing your cooking, your culture, your stories, your songs and your prayers.

    Ahh finally the real recipe for pasta fagioli. Like my grandma used to make. The restaurants can gets this right. Thanks for reminding me of my grandma.     I love you, Gina! Such delicious recipes and very sweet how you made a dish for your father. We Italians never forget our parents and loved ones. I enjoyed learning about your fresh vegetable garden in Italy, and how your hard-working, happy father sang to your mother, Angelina! My Dad loved his bean soup with lots of grated cheese on top! God bless them and you! Thank you for teaching me how to rehydrate and flavor dried cannolini beans. I’ve been buying the canned ones. 🌹❤️
