All about Serving & Storing Oysters | Pottery Barn

Oyster parties can be great social events. Relishing oysters is all about expressing love for good food. In this video, John Finger, Founder of Hog Island Oyster Co., shares a few tips about choosing and relishing oysters the right way.
According to John, there are three main oyster species---the Atlantic, the Pacific and Komodo oysters. Each species is different in its characteristics. In order to differentiate between good and bad quality oysters, John suggests buying oysters that are closed and not hollow from inside. To get the real taste of oysters, John recommends eating raw oysters; though in some parts of Northern California some people prefer BBQ style oysters as well.
John believes that oyster parties make a good theme for social gatherings and urges eating them regularly for good health.

Very nice video and clearly, ya'll (as we say in the South) know how to do oysters! I have been a raw oyster eater for longer than I can remember but lately I've been experimenting with grilling. Two things I'd like to learn more about. One, how to store shucked oysters so they can be prepared quickly or the grill and two, please tell me your BBQ recipe - it looks sinful!
