    40 years ago when I was doing lots of sourdough cooking, I made English muffins. They were so good. I patted the dough out and used a cleaned tuna fish can as my cutter. Never used a form, just put the dough on my cast iron circle griddle and cooked them after the second rise. I think my recipe made a dozen so it was a bit of cooking to get them all done. If the muffins are a bit soft inside, they will crisp right up when you toast them in the toaster. With four boys, I usually would make them on the weekend and have them for Saturday night breakfast for dinner.

    In college we rented a house with a 1940s stove complete with griddle. (We also had a 1940s sink with a built-in drain boards which I absolutely loved.). We used to make English muffins all the time but we didn’t have fancy rings - we used tunafish cans in the beginning. After a while we just did them by hand. Because we didn’t have a thermometer to tell us they were ready, we found that without the cans we could push on the sides of the muffins to see if they spring back.
    We found that one of those angel food cake slicers (looks like a big long tooth comb) worked really well for separating the English muffins. Two of those and it was done in just a second.
    I think that letting them cool isn’t just for cooling, but to let them continue cooking. Especially with the rings on, if they had continued cooling they would’ve probably continued cooking a bit and not been doughy in the middle. (That’s as much as I remember but that was almost 50 years ago😆).
    I don’t remember what kind of stove it was but it had the strangest oven controller. It was on the side of the big oven and it was sort of like the throttle control on the boat. Whenever we broiled, my free-sprited roommate drove my very straight-laced roommate crazy yelling out “full speed ahead” every time we turned the broiler on. But I laughed every time.

    Great video, but one doesn’t really need any rings at all. I have made these many, many times and only cut them out with a large jar of can. They will hold their shape beautifully. And it’s nice that you can make larger ones for the guys who like an extra large egg sandwich. It’s just so fun to be able to make things yourself. Thanks for sharing this and encouraging others to try it. They are so easy and worth the effort!

    Years ago we made egg and English muffins. There were no proper rings so we discovered that tuna cans worked beautifully. I really enjoyed this. Hope you are enjoying your Ankarsrum mixer. I found a trick to having the Ankarsrum mix bread dough a little easier. I add the flour in close to the roller and the arm doesn't move around as much and then you get the nice wheel appearance as it kneads.

      I’m frugal enough that I would definitely opt for tuna cans, lol. I have plenty, just have to remember to save them instead of recycling them. Great idea. My next learning project is BREAD and all the fun stuff. I don’t eat much of it but feel it would definitely be a skill I’d want if we were in an off grid emergency. Bright blessings to you.

      I also used tuna cans. Unfortunately you can't take the bottom of today's cans with a can opener.

    Unc used to make English muffins in his cast iron pan on the stove so it's most like the way you did it. There were no rings which act as heat sinks (sp?) but he did put a lid on the pan whilst they were rising. Post done he pulled it off the heat BUT left them in the pan to cool. Anyone caught with a knife about them were banished from the feast. One quickly learned "fork split" as the rule. Ya know, you have triggered a lot of fond memories. Thank you for that too! 🥰🥰🥰.     I use 2 forks back to back and lever apart by pushing them together on the edge in one spot like you did then separating and pulling the forks apart so that you open the muffin into 2 halves this keeps the sponge texture on the inside surfaces as you have pulled them apart not cut them as when hot, cutting it will make the cut surface doughy. This works well with hot bread rolls and hot scones too. Hope this is helpful. thank you for all your useful videos.

      They are delish too. They are super easy. You can add raisins and cinnamon. I have also used dried cherries and pecans. Looking forward to try cheese and green chilies. You do not need muffin rings. Shape them by hand and they keep the shape. A cast iron skillet to cook them. You just need a tiny bit of corn mill or none at all.

    I’ve also seen people use wide mouthed canning jar lids for their English muffin rings :)

      In college, my roommate taught us how to make them and we used very well washed tuna cans. They were bigger than the recipe called for but that was OK with us.

    I've heard you can use tin cans, opened at both ends, if you don't have muffin rings. These look great!

    I was so pleasantly surprised the first time I made crumpets, similar process. They are even more “hole-filled and just as delicious. I too love my muffin rings. Yip-i-de-doo-da!

    Oh my goodness. I wish I could have one of those muffins right now. Beautiful job, but too many carbohydrates for me. I had to laugh when you so neatly stacked the rings and I wondered why you were being so careful, knowing that they would all fall into a heap when you lifted the tray. Then you sprayed them - how ingenious. Thanks for a great video.

    They look so fluffy and tasty. As an English woman I admit I've never tried this, as the shop bought version in the UK is so good. Even quicker than this bread version is Welsh cakes- they are basic very flat scones with currants and sugar on the top, which you cook on a griddle in no time. Great for campfire cooking too. Thanks for an entertaining and informative channel.

    I raised my hand! I really did! By letting them cool in the ring it will continue to cook. But the insides will crisp up when toasted, so you are good. They look simply delicious!! 😋

    I make english muffins often. I don't have the rings, I just cut them with large mouth jar ring and cook in an ungreased stainless fry pan. They come out great. Yours look delicious. They are a good thing to have on hand for breakfast. I store in refrigerator.

    My daughter makes the best breakfast sandwiches with english muffins. She toasts a batch and using egg rings, she makes over medium fried eggs and cooks frozen sausage patties. Once the eggs and sausage is ready, she puts a sausage patty on the bottom bun then a slice of cheese then a cooked egg. They are so yummy! Sometimes I put a little bit of jam on the sausage then the egg then cheese.

    Hi Pam and Jim. Crumpets are done on the griddle as well and I have larger rings to suit the crumpets and they are exactly the same as yours only bigger. Crumpets are a pure breakfast joy for me with butter and apricot jam and a cup of black Lady Gray tea. I also enjoy making english muffins as well but only make them when the grandkids are here as well as belgian waffles as they always request either of them for breakfast lol. Watching crumpets cook is also interesting. Michelle

    Pam, firstly I have not looked into it but on Doug and Stacy’s homestead channel she mention the white parchment paper when heated gives off a chemical 🤷🏼‍♀️. She suggests the brown parchment which I haven’t seen or looked for. I really want to make these ❤️

      I use unbleached parchment paper but there is silicone on them. No where have I found just unbleached parchment paper without anything on it. So the choice is bleached or silicone coated parchment paper. If anyone knows where just brown parchment paper, without any coatings can be found, please let us know. Thank you. 🙂

    Another wonderful video from two wonderful people.
    In the past, after having eaten my "load of muffins", I have tried to deflate my stomach in like manner as one deflates the muffin dough. I thought that made sense. Only, it didn't work... (hahaha). Love muffins. Not sure about waiting to eat them until they have cooled, though. The Victorians and Edwardians had special muffin dishes, the keep them warm and ready at the table. One should have them with lots of butter. But one thing is of great Importance (and I'm Being quite Earnest): "I can't eat muffins in an agitated manner. The butter would probably get on my cuffs. One should always eat muffins quite calmly. It is the only way to eat them." Not my words, but words of an Irish genius. Love your videos; keep up the good work!

    The muffins will continue to cook as they cool from the outside so I'll bet that yours will be perfect, not doughy in the middle. I'm going to try the recipe on my pancake griddle. Thanks for providing the link to KA's recipe.

    We make sourdough "toaster Biscuits" every Sunday with our discard. They freeze beautiful. I find that after they have cooled I place them in the toaster oven for about 1 min, it will puff back up a bit. Then take it out split & toast. I use a serrated knife. I find it works better than a fork.

    Oh my gosh, Pam! You have no idea how thankful I am to see your video! I have tried several times to make English muffins and just couldn’t figure it out. The kept rising and ending up looking just like hamburger buns! Plus, I just couldn’t get the “nooks and crannies” the way I wanted to. Know I know the secret! Muffin rings and fork splitting!     Wow those are some great looking English muffins!
    Well I’m so excited I am about to start my own ATV adventure! Yesterday we signed a contract to buy a lot in the Ocala Florida forest. Wow what a blessing. There are very few lots available in this place. Because it is a huge forest huge! So I’m going to go RV shopping Thursday and Friday. We are going to rent a campsite for 6-9 months. You cannot have an RV on your land until you have a structure that is hooked to water and electric. Oh and with a septic tank. So it’s going to be quite a while before we can have that set up going on. But we’re going to go back-and-forth from SC to the campsite to clean up our land. Because it to forest, lol. So hopefully by the end of that time we’ll have some sort of barn structure that we can park the RV in. But this forest is phenomenal. List to follow.

    Gun/rifle ranges
    Pro class bass fishing. How pro class? The largest bass in the world yes I said in the world was caught in a lake 20 minutes from my property a couple years ago.
    Hiking and ATV trails all through the forest
    Many lakes with boat ramps
    Not to mention the entire center of Florida is covered in springs popping out from aquifers under Florida. They are some of the most gorgeous springs you would ever lay your eyes on.
    To say I am excited is an understatement!

    Oh wow these look delicious! You are exactly right regarding letting them cool. Paul from the “Great British Baking Show” made English muffins in one of the master classes. Mary Berry wanted to taste one and Paul was quick to tell her that they had to wait until they cooled because the muffins were doughy inside at that moment as they would continue to cook until cooled.

    I like to finish them off in the oven for a few minutes just to be sure. But in grid down I’d be so happy to have them anyway💕
