I been reading the manual and finding the Speedi and Combi are different animals. Speedi would steam for 20 minutes before starting crisping but Combi reads after coming to appropriate steam level starts crisping for set time. Doesn't have a default streaming fixed time like Speedi. Only Combi baking says 20 minutes steaming then starts bake fuction for set time. One definitely doesn't transfer to the other, each has a learning curve so have to rethink uses.
Yes both have similar functions but are definitely different animals but I think you can prepare the same meals once comfortable with functions. I love them both! Thanks for watching!

You could possibly do it on the sear function but you would have to keep adding to the pan as they wilted down and then simmer them on the sear function till tender.
I cooked in my combi for the first time, spaghetti & chicken thighs and think speedi worked better. Spaghetti with 2 cups chicken broth and 1 jar spaghetti sauce with broken up chop meat came out kind of dry with some spaghetti burned together. I had to add little water at end to loosen it up. Thighs were cooked on top tray, 6 with skin on and it was swimming in it's own juices. 20 minutes on combi baking so what I found. If your making any coated meat better be skinless or juices will prevent it from crisping unlike in the speedi had no problem. Spaghetti should have broken in half and altered directions so wouldn't pack down. Looks like speedi technics aren't fully transferable to combi
This may have had better results with the combi meal function rather than bake....the pasta needed more liquid. The speedi does allow the juices to drain down to 2nd level so yes skin on chicken not as crispy....but allows you to lock in flavor and remove some fat/juices before serving....I use both machines for different meals but I feel I need both....at least that's what I tell my husband...lol! Try diff method before writing it off, it really is an awesome machine

This is PERFECT. I cook the biggest birds i can find, a 7lb chicken is exactly 55 minutes to temperature.

It is but it uses steam, heat and a fan so it cooks quicker than an oven.

For 1lb pasta with a combi meal I use 4 to 4.5 cup liquid depending on the shape of pasta
