    Ingredients
    2 chicken breast cut thin
    4-5 cloves of garlic or already minced
    1 shallots cut thin
    Green onion
    2 limes
    1/2 cup bean sprouts
    Rice noodles
    1/4 cup rice wine vinegar
    1/3 cup soy sauce
    2-3 tbsp fish sauce
    2 tbsp brown sugar
    1 tbsp Sriracha
    1 tbsp ginger paste
    3 eggs
    Chopped peanuts
    Kosher salt & Coarse black pepper to taste
    Directions
    Season the chicken cutlets with a little olive oil, salt, and pepper on both sides. cook on med heat
    Add a little avocado oil on the griddle and cook the chicken. When they're fully cooked, remove them from the griddle and chop them up.
    Place pan on the griddle and thinly slice the shallots, green onion and mince the garlic. shallots for about 2 minutes. Cook 1 min and then add to the the rice wine vinegar, soy sauce, fish sauce, brown sugar, and Sriracha and ginger Mix well and cook on low.
    Cook the rice noodles either on your stove top or on the griddle.
    Cook the noodles until they are just before being fully done and have them ready.
    Chopped chicken to the griddle along add cooked noodles. Add the sauce to the mixture and toss everything together. While the sauce reduces a little, crack three eggs next to the noodles, briefly cook them, and then fold them into the noodles and chicken. Add the remaining sauce, bias-cut green onions, and bean sprouts. Toss everything together to mix well.
    For serving, garnish the dish with chopped peanuts, a little chopped green onion, and a small lime wedge.
