Hi Ken , I also make the vegan pastitso. When it comes to the bechamel sauce, I heat the milk in the microwave just under two minutes so I don’t have to stand there to long to stir. I love comparing your cooking to mine, it’s pretty close. To me you are a little heavy on the oil but that’s the proper way of cooking anything Greek. My 87 year old father compares my cooking to my mum and one of his sisters. Thank god I love cooking especially Greek food. I get annoyed every time I see so called chefs that try to replicate Greek food in 20 to 30 minutes. Greek food needs time to cook and that’s why I enjoy your cooking segments
Hey Despena, thank you for your question. You can prepare and refrigerate it up to a couple of days before serving and bake it at time of service. You can also fully cook it and reheat.... either way, I wouldn’t keep it for more than 2-3 days.
