I took mine out of the oven and yes it has hints...and I mean small hints of purple. Next I am going to try to use Ube extract and maybe ube jam. Now that I have committed myself I have to try again. I also am going to reduce the cocoa powder down to 1 tsp instead of 1 Tablespoon and sift it into the flour.

Girll just stop adding cocoa and coffee😭 Now I will tell you a wonderful way and i want you to try it please The recipe is : 5 egg yolks Granulated sugar 65 g Oil 100 g Butter milk 120 g cocoa one tablespoon All purpose flour 160 g Baking powder Half a standard spoon Baking soda Half a standard spoon And 5 egg whites A quarter tablespoon of salt Granulated sugar 65 g Tips : First You have to add color gradually until you reach the color you want Second Just add a tablespoon of cocoa Not more Third The secret part here is to cook it in a pot of water at 170 degrees for an hour and a half. It will retain its color and become spongy and wonderful.
