Wilton makes these pink vanilla flavored candy melts which are shockingly, amazingly delicious and most local grocery stores carry them. So I used those guys with the freeze dried strawberries and just to make sure I didn’t miss out on the signature strawberry taste I used a teaspoon of strawberry extract! Let me just say when I was mixing this the smell was bonkers!!! It was so fragrantly delicious and then the baked good itself …WOW!! Thanks for these NY cookie recipes💜

@@LifeofMaria3 no, ruby chocolate is different as it is produced from ruby cacao pods. It has a slightly sour berry flavour,not strawberry milkshake flavour like they describe in the video.
It's probably Callebaut Strawberry Callets - Belgian chocolate coverture - but you can probably find a strawberry flavoured compound chocolate candy melt where you are. Wilton make a strawberry flavoured candy melt. Compound chocolate won't taste as nice though - I'd just use a good quality white chocolate (one with cocoa solids, not a compound chocolate).
I wish you would ship to countries other than the UK. My daughter adores you all and I would have loved to surprise for her 7th birthday in March with this baking kit. How much does a kit weigh? Maybe I can get a uk friend to ship it to me if postage won't be ridiculously high. I'm aware I can just source the ingredients myself here (maybe not the strawberry chocolate though), but I know she would have loved a proper kit from CupcakeJemma and the team!

Funny you mention it, my mom made this request recently and so I made some based on their original NY recipe. I basically just mushed 3 medium sized really ripened bananas (I just stick them in the oven at 350 F for 10-20 min to do that) and added cinnamon and a little nutmeg, then made the cookies as directed but added pecans with the chocolate chips and the banana in along with the egg. Oh I also always add vanilla to my cookies at that stage. The dough is a lot stickier, but I stick it in the fridge for a bit and then portion it out. It bakes roughly the same but time may vary slightly. I've made them a few times and they've come out amazing.

Baking these (March 2023). I weighed everything out to the measurements. (I included 1 tsp of Strawberry extract to make sure there was an added punch of strawberry flavour.. Since it wasnt mentioned, i did not room temperature the eggs. being north american I didn't have the strawberry chocolate, so i used a mixture of white and cream cheese morsels. going by the instructions, i matched the look of the video, but after i added the two eggs in the dough was SAHARAH dry. even when mixing by hand a little bit, it did not come together at all. I needed to actually add an entire egg to get it to combine as it looked like in he video. (I wasn't sure at this point what to do - add water/butter or a egg yolkk, so i went with egg yolk, and when that didn't do it, the egg white went in and it finally combined). - i was doing this reverse creaming method with my hand mixer as i don't have a stand mixer. I was able to get 20 or so cookies, and right now they are freezing. I am hoping that everything turns out well. I will report back tomorrow after I bake these.

Preheated the oven to 400c and baked them for 13 minutes (for roughly 67g balls - i wanted to have enough cookies with the ingredients used vs. having giant cookies). they came out really well. (some overspread, some did not so I just shaped them with my biscuit cutter). . They did not look very new york cookie-esque on top. (but they are really soft and gooey inside so i am assuming that worked).mostly because strawberries are so expensive (freeze dried), and the sheer amount of chocolate used i don't know if i'll actually make these ones again, but they did come out lovely. I would change: * adding the extra to maybe 1.5 to 2 tsp of strawberry. I really wanted that punch of strawberry flavour and i didn't get it. (perhaps this strawberry chocolate gives it but i couldn't find something similar in Canada that didn't have fondant in it,) *adding a chopped up white chocolate bar instead of white chocolate morsels (more pools of chocolate). *Adding more than 15g of strawberries. (it fleckles nicely as it is. but not a LOT of it) *perhaps following the birthday cookie idea of breaking the butter THEN adding the sugar. (for better sugar butter nuggets) *stirring by hand once i add the egg. I feel my hand mixer broke it down a bit too much especially because it was too dry before. (I did weigh everything as noted - so i know i didn't add too much dry ingredients). and perhaps add one egg at a time. as noted i didn't add the raw sugar coating mostly because i figured these were as sweet as they wre without it and not missing it as much. it not being a GIANT cookie is fine as well, mostly because again when using that much chocolate, butter and flour, i would like more cookies vs. the giant bakery size cookies) I do hope my notes help anyone trying these cookies out. i have the ingredients to try 2 other versions so i can't wait) :)

Yes, you can do it with all the cookie dough. Freeze and use when you want. That way, you don't have to worry about eating too much at once
