Cookies with Intense, REAL Strawberry Flavor

- These bright strawberry cookies get their flavor from real strawberries--no cake mix or artificial flavors needed. My recipe is quick and requires NO chilling!

Ingredients
2 ½ cups freeze-dried strawberries (see note) (1.5oz/45g)
1 cup unsalted butter, softened (226g)
1 cup granulated sugar (200g)
Pink food coloring, optional
1 large egg
1 ¾ cups all-purpose flour (215g)
¾ teaspoon salt
½ teaspoon baking soda
¼ cup granulated sugar, for rolling (50g)

Instructions
00:00 Introduction
00:18 Preheat oven to 350F (175C).
00:23 Place freeze-dried strawberries in a food processor and pulse repeatedly until they’re ground to a fine dust. Measure out 1 Tablespoon of fine powder and place in a small dish (for rolling the cookies).
01:46 Combine butter and granulated sugar in large bowl and use an electric mixer to beat until well-creamed (about 2 minutes on md-high speed).
02:14 Add strawberry powder (minus the Tablespoon which you will reserve for later) and stir on low-speed until combined.
02:35 If desired, add pink food coloring until desired color is achieved.
03:28 Stir in egg until combined.
03:36 In a separate dish, whisk together flour, salt, and baking soda. With mixer on low-speed, gradually add to the strawberry mixture in 3 parts, stirring until completely combined.
04:43 Take your reserved strawberry powder from earlier and add ¼ cup (50 g) of granulated sugar. Whisk until well-combined.
05:01 Scoop dough by level 1 ½ Tablespoon and roll between your palms to make a smooth ball. Roll through the strawberrry/sugar mixture until completely coated and place on a parchment lined baking sheet, spacing at least 2” apart.
05:25 Bake in center rack of 350F (175C) oven for 11 minutes. Allow cookies to cool on baking sheet for several minutes before using a spatula to carefully transfer to a cooling rack to cool completely before enjoying.
Notes
Freeze-dried strawberries
These are usually sold in the grocery store in the dried fruit and nut section. I place these in a food processor and pulverize until they’re a fine dust.
Storing
Store in an airtight container at room temperature for up to 5 days.

I ran out and got the strawberries as soon as this video was posted. Made the cookies last night.
They are easy and delicious. I love how the flavor turned out. I experimented and topped one batch of the cookies with white chocolate chips as soon as i took them out of the oven. I didn't roll that batch in the sugar before i put them in. That was good, too.
I skipped the food coloring bc I didn't feel like buying it, and my cookies were pretty pink. Like a baby pink/dusty rose. So they were still cute without the food coloring.

I made caramel apple cookies. I sort of followed the same technique with freeze dried apples. The only difference I did was add caramel bits like chocolate chips. The caramel bits are like the size of marbles. You can taste the chewy caramel on the inside. It's really tasty. It can work very well for autumn if you ask me. You ought to try that.

I finally got around to making these! They are as good as I thought they would be. Naturally, the strawberry taste does fade a little after baking, but it's still quite strong. I did end up using all the strawberries in the 2.0 oz bag I bought as it came out to around the amount we need anyway.
The great thing is, now that we have the recipe for this, people can use other freeze-dried fruit flavors as well.

tip for pulverising stuff like freeze-dried fruit - line the top of the container with parchment and then screw the lid on. limits the messy cleanup as well;) oh, and the recipe looks amazing!

Sounds yummy. But my niece is defly allergic to red food coloring. But what I've found for a good substitute and good for you is beet juice extract powder. And you can't even taste it when you bake with it either. Will give this a whirl but am going to add some chocolate chips to mine. Thanks again, your the best!

These look amazing! I do want to try making these cookies but with 2 changes. I want a chewy cookie and I heard use melted butter instead of softened butter will provide that result. Also I want to add white baking morsels. Do you think the recipe will still turn out ok? Should I decrease the amount of sugar in the dough if I add the baking morsels so they aren’t cloyingly sweet?
The melted butter can contribute to a chewier cookie. These are a chewy cookie already. I didn't like the results when I tested melted butter. It could work, but the cookies will need to chill longer. You can add some white chocolate into the batter without alterations. :)

You only want to use freeze dried strawberries here. Regular fresh strawberries will introduce more moisture and have devastating effects on the cookies.

I'm not sure how using fresh or frozen strawberries would work. That is going to add a lot more moisture into the batter and would be bad news for the cookies. :(

I'd opt out of the food dye 😂 we eat with our eyes and the food dye makes those cookies look like lean beef slider patties ready for the grill.
The paler natural hue of the strawberry is much more palatable.

These cookies are GREAT! I've made them several times, and everyone loves them. The strawberry flavor is intense. I've also made them substituting free-dried apples and bananas, and both of those turned out great too. If you use apples, be sure to add cinnamon for some extra flavor.

Just tried these cookies. So weird. Not bad wierd, just wierd. XD Like, I like strawberry flavor, but I've never had it in a cookie. Cakes, sure. Jams? Candies? Jello? Yep. Cookies? Nope. Warm? Nope. I took one bite of a warm cookie and put it down until it cooled the rest of the way. Better when room temp, but still a bit odd. Then I grabbed a bag of bittersweet chocolate chips (Ghiardelli brand) and took a bite of cookie with a chip. Pretty good, though I wish I had semi-sweet instead. I'm down to the last tray of cookies (yes they're being baked right now) so I shoved 3 chips in each cookie for 9 cookies... we'll see how they come out once baked and cooled! And if I like, make a chocolate drizzle out of more of the chips... or go buy a bag of semi-sweet to do so. We'll see! :D
Also I did chill my dough, not because it was too sticky, but because I made the dough and then I had to go do something else for a couple hours and didn't think it'd be a good idea to leave my dough out. And I had to use a 2 teaspoon cookie scoop and scoop 2 balls per cookie because the 1 1/2 tablespoon scoop I have is apparently a dud and didn't like the still somewhat sticky/stiff dough and majorly skipped gears so the scraper arm didn't move properly. And even when adjusted, it kept doing it. Even if I dipped the scoop in water and/or flour before each scoop. *sigh* My small scoop however worked like a dream as usual. lol
And I have so much strawberry sugar left over but I have no idea what I would do with it if I wanted to save it.. which is probably a bad idea since raw cookie dough was rolling around in it anyway. Heh
well, the great UA-cam algorithms must’ve figured out that I paid heavily for a couple packages of freeze dried strawberries. Recently, got them to amp up the flavor in a strawberry buckle I was doing. Strawberries, lose so much of their aromatics in cooking, they really do need a little help. where is a good source for affordable freeze dried strawberries, or do you just have to be willing to shell out good money for decent ones. The other question I have is about your choice of using baking soda? I was curious, is there enough acidity, well, there must be because the cookies obviously turned out great, from the strawberry pie with her to activate the baking soda. Did you first experiment with baking powder? If you didn’t, what would the result be of subbing baking powder for baking soda. What about including larger chunks of the freeze dried strawberries in the cookies. AnyWho, enjoy the Contant, keep up the great work! Look forward to more.
I buy the generic freeze dried strawberries from walmart. They are pretty inexpensive and have a great flavor. I did not care for the results with baking powder. I think leaving larger chunks of strawberry would be perfectly fine. Of course you can adjust that to taste. :)
If you want a strong strawberry flavored buttercream use freeze dried strawberries. There's a strawberry cake I make that uses a reduced amount of strawberry puree for the batter then the freeze dried strawberries for the frosting. I've used freeze dried berries in a SMBC, marshmallow buttercream and cream cheese frosting so far. I'm not joking when I say it taste like you're eating a strawberry milkshake. As for the cake and cream cheese frosting I mentioned above that's not my recipe. The credit goes to Sally's Baking Addiction. And yes, she got me addicted to that cake and the use of freeze dried berries in my frosting, lol...

I made a muffin that used spinach puree in a similar way. Swapped it for fresh strawberries one time and loved it.
My great grandmother made zucchini cake, and I found I have a fondness for veggie cakes. I used to dislike fruit until I started baking with it more. I want to invest in a freeze dryer, because I want to try all sorts of fruits this way... the powders are very pretty!
Whenever I make strawberry cookies I always end up using a box of the cheapie cake mix 😂

I’ve done several experiments and natural strawberry flavor can’t hold up being baked, just like natural watermelon flavor can’t hold up. They are such delicate, non-oil based flavors that heat destroys them (unlike citrus flavors from orange, lemon and lime zest). I think you might get better results using a light strawberry glaze applied to the cookies after they come out of the oven. In any case, it would be cool if you would avoid using freeze dried ingredients in your future videos unless you’re doing something revolutionary because most people (probably 90% of your viewers) can’t afford $3,000.00 for a Harvest Right freeze dryer. Great video! I watched until the end.
I'm so glad you enjoyed! An ounce of freeze dried strawberries is $3.72 at my local grocery store so no need for a freeze dryer. The strawberry flavor comes through quite nicely here and these have a great bright flavor that's distinctly strawberry, I hope you'll give them a try!

I based my comment off of your son’s brown sugar comment and his opinion that the same red food coloring cookie tasted like strawberry. I’ll give this recipe an honest review ASAP. Did you find the freeze dried strawberries in the bulk food bins or were they in plastic packages on the baking aisle with chocolate chips, nuts, etc.?

I never get cookies rolled in sugarto look like I did anything …it just melts into the cookies.
A coarse sugar is probably a better bet then. It will melt a little bit but you should definitely still see it. :)

Beware of the strawberry powder,it can activate breathing distress to asthmatics. The first time I used this powder in a recipe my asthmatic grandson was assisting me,yikes,he quickly needed a resp treatment.

Unnatural food coloring is very bad for you. Try instead adding freeze-dried dragon fruit (powdered) to get that awesome pink color. It pairs amazing with strawberries (dragon fruit has a very light flavor) without taking away the strawberry flavor. God bless. 💖☺️🙏🏻✝️🇺🇸
