- The Cookie Kids are back with the recipe that you guys having begging us for for MONTHS. These Lemon Meringue Cookies are backed full of White Chocolate, Crispy Meringue pieces (home made obvs) and a ton of fresh Lemon Zest which makes them, as Dane says "as refreshing as a cookie could ever be".

For the Crispy Meringues
Preheat Oven to 90C fan assisted (110C non fan)
50g Egg White
100g Caster Sugar
For the Cookies
Preheat Oven to 190C fan assisted (210C non fan)
230g Cold Unsalted Butter
Zests of 2 Lemons
160g Caster Sugar
160g Light Brown Sugar
50g Crushed Meringue
300g White Choc Chips
500g Plain Flour
2 tsp Baking Powder
1 tsp Sea Salt
2 Eggs

Just made these and they are amazazing! Thank you for the delicious recipes and all they sunshine & laughter you two bring to the videos.
Love these cookies and they have been a big hit and huge seller for my new business. Filled with the amazing zest (I doubled the zest amount for my batches of cookies). The awesome crunch of the meringue bits, the flavorfilled center of the white chocolate chips and in mine I added 1 cup of Philadelphia Brand Cream Cheese to just have it pop a bit. I didn't make mine as big only because of specified order alterations by customers. I cut my cookie size in half. All in all I really recommend these especially with summer in sight.
*NOTE - With the addition of the cream cheese I refrigerated my cookies upon delivery and they don't store very long. Just 5 days in a cool place for storing.
Just for fun, I substituted the lemon with Lime. Added just a smidge of food coloring paste to make them have a hint of green and it was a very awesome visually appealing treat for a few customers.

I just tried this recipe with a lemon curd filling. The lemon curd won’t freeze but it’s worth persevering. They are absolutely delicious!

Sigh.. I'm getting old and grumpy and found the constant laughing over nothing irritating but my god this recipe was good. My family loved it to bits. As they have all of the NY cookie recipes these guys have put out. I can't compliment them enough. My son in law adores the oat one and he hates sultana's and oats. :) I have tried many of the recipes on this channel and each one has been a hit with the family so I can't thank you enough. :)

We went to Paris a few months ago and we were intrigued by a long queue outside Cedric Grolet on Avenue De L’Opéra. We had one of their marble cakes and it was delicious. They also had beautiful pastries too!
I think Pembering the dough would be my favorite part of the process.

Michalak, Du Pain et des Idées, Des gâteaux et du pain, Cyril Lignac, Aux Merveilleux de Fred, Angelina Paris to name a few that I really enjoy. Just try to stay away from chain bakeries like Paul etc. (they are ok but probably not what you're after). There is a great pâtisserie almost at every corner. And Legay Choc if you feel adventurous...;)
I made a triple batch of these NY cookies for a teacher appreciation day. They were like savages! Bestest recipe EVER! I’ve been asked so many times to share your recipe! Just a question.::: is it possible to do a sub with GF flour for all the staff that missed out due to restrictions!????

They can’t make this flavor unfortunately. In their video doing the NY cookie matchadamia flavor, they told the viewers that they’re both allergic to peanuts 😢

Although not popular with the masses, they make a good companion for black tea, especially Earl Grey.
made them twice already but the second I tried filling them with cold lemon curd . Showstopper

@@RelaxAndSmokeMeth Hello ! I didnt but I think you should because i had some of them ending up really ugly and overflowing . I had problems with my freezer space so i just transfered all of the curd . Ideally you may want to freeze individual weighted drops per cookie like sally does in the nutella or biscoff episode

@@RelaxAndSmokeMeth not at all , I actually tried it with a bit of lemon juice in the dough too (as little as I normally would put vanilla extract) . It depends if you want them extra lemony or not . I think its a great balance between zingy - lemony and buttery. But dont take my word for it , I am Greek we put lemon on everything xD

Advice please :) if I want them to be half the weight, how long should I bake them? Half the time? I would try it, but dont want to heat up the entire oven for just one cookie at a time 😉
Update: lacking an answer, I had to try and actually just used the same time for half the weight. Didn't use the meringue, just lemon cookies. But worked great.

What would happen if you were to omit the white chocolate? Would the consistency change because the chips wouldn’t be there to impart their fat into the cookie, or would it really not matter much?
