Hi Ken, this looks and sounds great, almost the identical marinade I use for lamb and chicken - just didn’t think of use this for pork ribs. I really dislike the sticky-sweet bbq sauce that is quite typical and also like German rolled ribs too. Thank you.

I'm going to try your technique - but I have a question: A lot of recipes recommend cutting up the ribs individually before cooking. If I did this, would it alter the low and slow 4 hours? Maybe only 3.5 hrs?

The béchamel is actually pretty good. The yogurt makes it tangy. Definitely worth trying....
