- Baked Ricotta with Balsamic Nectarine
Ingredients:
1kg (2.2 pounds) ricotta
3 tbsp olive oil
salt and pepper to taste
zest of 1 lemon
3 nectarines, cut into 6 wedges each
small spring of rosemary
3 tbsp balsamic vinegar
sourdough toast to serve
Method:
1. Place the ricotta onto an oven tray and dry well, then drizzle with olive oil, season with salt, pepper, and lemon zest. Bake in a 392°F (200°C) oven for 30 minutes.
2. For the nectarines, place a heavy-base pan over high heat and drizzle with oil, then lay in the nectarine slices and season with salt. Once they have a good dark colour on one side, flip them and add the rosemary, then the balsamic vinegar. Cook until the balsamic thickens. Remove from the pan and set aside.
3. To serve, I like to lay this out on a platter with the nectarines and toast on the side for everyone to dig in and serve themselves. Works great as part of a big brunch or afternoon snacks.

andy, i love your videos. my dad trained as a chef while doing mandatory army service in the 80s and has always been an amazing cook. he started sending me your videos a while back and “what do you want for dinner, babe?” became a joke between him and my mum (he always cooks for her!) my fiancé and i started doing it, too (he often cooks for me…) you’ve inspired me cook more, as well, so i’m not always the babe 😅

I made this tonight. There were no nectarines in the store so I made do with canned peaches. They cooked down really well. They turned out nice and thick. I also had some cherry tomatoes that I needed to use up so I cooked those down and put them on top of the ricotta too. Thanks Andy for the tip

Tip for stone fruits. If you don't need the halves intact then slice in half again. One piece can be pulled off the stone and then the stone pulled out of the last piece. Saves time, effort and mess. Of course, pits can be clingy, but still easier than scooping.
I also think it didn't help that those nectarines were so underripe that they were crunchy. That certainly wouldn't have made removing the pits any easier.
