Roasted vegetable lasagna

This comfort food is a delicious lasagna with a cheesy sauce and a choice of your favourite roasted veggies.
Ingredients
4 tablespoons of butter
4 tablespoons of flour
1 L milk
200 g cheddar cheese grated
Salt and pepper
2 courgette chopped
2 aubergines chopped
250 g mushrooms sliced
2 tablespoons olive oil
9-12 lasagne sheets (pre cooked)
150 g mozzarella
Method
Heat the oven to 200°C.
Toss the vegetables with olive oil and salt and pepper.
Place on a baking sheet and roast for 25 minutes.
Melt the butter in a saucepan over a medium heat.
Add the flour and cook for about a minute while stirring constantly.
Add the milk a little at a time and keep whisking in between. Bring to a gentle simmer and cook until it is thickened.
Add the cheddar cheese, stir the sauce and then remove from the heat. 
Start assembling by spreading a spoonful of Bechamel sauce in the baking dish. Top with lasagne sheets and then add another spoonful of sauce, top this with the vegetables. 
Repeat two more times and top with the remaining sauce. Sprinkle grated mozzarella on top and bake for 45 minutes.

Excellent.. you read my mind. I was craving lasagne the the other day but thought it’s all going to be way too much work. This. Recipe looks good and I’ll give it a go :)
