Easy Pumpkin Bread Recipe

- 15 oz pumpkin puree
4 eggs
1 cup vegetable oil
3/4 cup water
2 tsp vanilla
2 1/2 cups sugar
3 1/2 cups all purpose flour
2 tsp baking soda
1 1/2 teaspoons salt
2 tablespoons pumpkin pie spice
spray your baking pans with nonstick spray
350ﾟ oven 45 to 60 minutes
until a toothpick inserted in the middle comes out clean.
measurements for loaf pans:
8 IN. X 3 3/4 IN. X 2 1/2 IN. (203mm x 95mm x 63mm) (this recipe made 3 loaves.) loaf pans were purchased at Walmart

Hi Lila, I hope you are all ready for Christmas. I have had an incredibly busy month. 5 events in one month. 4 of which I am hosting. Thank goodness my niece invited us to go over to her house for lunch tomorrow. That will be a break for me.
I discovered pumpkin bread back in the eighties. Believe it or not it was a funeral reception and somebody brought pumpkin bread. I thought it was the best thing since television. Lol I asked her for the recipe and she said I could call her. I missed her 3 times, but I was relentless. I finally caught up to her and she read it to me. I have been making it every Christmas since. For a while there I would use the smaller cans of coffee and I would bake it in those. People thought I was giving them a can of coffee as a gift at 1st. I don't drink coffee like that anymore, so gone is that tradition. Thank goodness now they make decorative tins. I hope you have a warm, safe and beautiful holiday.

What would be the baking time for mini loafs?
I would say about 25 to 30 minutes. Poke it in the middle with a toothpick at 25 minutes. If it comes out clean, it's done.

Hi Connie, if you are an avid baker and happen to have these ingredients, this is a recipe for homemade pumpkin pie spice: 2 tbsp cinnamon, 2 tsp ground ginger, 2 tsp ground allspice, 1 tsp grounds cloves, 1 tsp ground nutmeg.
