Scorpion Bowl - How to Make the Famous 1941 Tiki Punch (Smuggler's Cove Version)

  • Here’s how to make the Scorpion Bowl, the classic tiki drink. This party-sized cocktail made with Gold Rum, London Dry Gin, Cognac-style Brandy, Orgeat, Simple Syrup, Lime Juice, Orange Juice, with an Orchid, Mint and an Orange Wheel for garnish. It has evolved from Trader Vic’s original 1940’s recipe, but has remained one of the most popular Tiki creations.
    It was certainly in Vic’s top three in terms of popularity, along with the Mai Tai and the Fog Cutter. It was sweetened with one of his favorite exotic ingredients, orgeat, which appeared in his top three drinks as well as the likes of the Trader Vic Punch, Tiki Bowl, Kava Bowl and the Eastern, London and Munich Sours. The Scorpion Bowl appeared on Vic’s menus as early as 1941, along with a drink called “My Kava Bowl”, but the punch has roots in both American and Polynesian drinking traditions that stretch back centuries.
    According to David Wondrich, in what is now the US, from about 1670-1850, punch reigned supreme, but by the time of Jerry Thomas, Harry Johnson and the Gilded Age, the cocktail had knocked punch off its throne, and by the time Prohibition rolled around, it was dead in the gutter. Vic, who opened a bar in Oakland right at the end of Prohibition, was already playing around with punches in the early 1940’s and in his 1946 book, he talked about wanting to raise punch from the dead and ward off the bad gris gris of punch’s reputation for behind served to stuffy crowds of people afflicted with Long Island lockjaw.
    To help break away from it’s crusty reputation, Vic drew inspiration from the ritual communal drink, prevalent throughout Polynesia, of Kava. Kava is a plant that was central to Polynesian parties, ceremonies and entertaining visiting dignitaries from other tribes.
    Vic took the communal aspect of the Kava Bowl ceremony, as a celebratory gathering point, and attempted to reenact that atmosphere in his restaurants by creating shared drinks (don’t call them punches). However, instead of everyone ladling from the bowl into their own cups, Vic had them use straws to all sip from the same bowl, which made for a more intimate, yet playful atmosphere.
    Most modern Scorpion Bowls will be garnished with fire. Vic would garnish his with gardenias and that’s a good way to go, but I like creating a bouquet of an orchid in the bed of mint. The orchid, ever since its introduction by Harry Yee in the 50’s has become the universal tiki drink signifier. The mint harkens back to the original recipe that had mint leaves in the punch. The orange wheel acts as an anchor to hold it all together as you drink your way to the bottom of the punch.
    Keep in mind, that unlike some modern tiki punches, this one is on the boozy-side. You can definitely taste the gin. In that sense, it feels like it could have been unearthed by David Wondrich from a 19th century handwritten recipe. And while it’s not as wild as something you’d get at Three Dots and a Dash in Chicago, it’s classic and you’ll know why as soon as you taste it. Okole Maluna!
    Recipe:
    4 oz (120 ml) Gold Cuban Rum
    4 oz (120 ml) London Dry Gin
    2 oz (60 ml) Brandy
    2 oz (60 ml) Orgeat
    1.5 oz (45 ml) Simple Syrup
    2 oz (60 ml) Lime Juice
    4 oz (120 ml) Orange Juice
    garnish Orange Wheel, Orchid, Mint (optional)
    Stir with ice. Pour into tiki bowl filled with 3 Cups (720 ml) of ice. Add straws and garnish. (Optionally, to simplify the recipe, abandon the Simple Syrup and use 3.5 oz/100 ml of Orgeat for the sweetener.)

    It truly is a Tiki Christmas!
    I wanna apologize about pestering for this drink. Kinda like the Singapore Sling, the history of this one planted seeds in my head. I'm glad you finally covered it, and it makes for a great way to end out 2018. My only complaint is the bowl you used: The earlier versions I thought were more intricate, and the tikis holding up the mighty vessel seemed more excited, but maybe that it's just me.
    Though it does make me wonder if you'll cover some of the Trader Sam's drinks in future videos. There's plenty of recipes online due to reverse engineering from ingenious tiki goers, and I know you might have fun with them!

      Glad you dig the video and was worth the wait.
      This bowl is different from some of the other Trader Sam's bowls. This one is the Drummer Bowl and the other editions they've had were the Uh Oa! Bowl.
      I'm not sure about the Trader Sam's drinks. I liked the ones I had, but I've got a handful of other drinks queued up in the meantime. Wanna send me some links to the reverse engineered drinks?

    • @DistinguishedSpirits
      @DistinguishedSpirits  5 років тому +12

      In terms of creating a single serve, just divide everything by 4. It scales pretty well.
      1 oz (30 ml) Gold Cuban Rum
      1 oz (30 ml) London Dry Gin
      0.5 oz (15 ml) Brandy
      0.5 oz (15 ml) Orgeat
      0.33 oz (10 ml) Simple Syrup
      0.5 oz (15 ml) Lime Juice
      1 oz (30 ml) Orange Juice
      Shake with 6 oz (180 ml) of ice. Pour unstrained into a glass or tiki mug. Serve with straw.

      It was pretty good. They have a lot of great design, decor and effects. In terms of the menu, they don't have a lot of classics (Fog Cutter, Zombie, etc.) but their original tiki drinks are all pretty exciting. They have fun, collectible, limited mugs, so that usually excites the tiki fans. They also have good music playing, all mid-century exotica. I've only been to the one in CA, so I'm not sure how the FL one compares. Either way, if you're into tiki, you'd probably dig it. Hope that helps. Cheers!

      Hamilton rums are hard to find in Europe. You're going to have better luck with other brands. And this bowl in this video came from Disneyland's tiki bar called Trader Sam's. So you'll have to get it there or on eBay. I know there is a Trader Sam's in California and Florida, but I'm not sure if there's one in the Paris Disneyland, which I assume is the closest one to you. All that being said, you can get another bowl and serve it that way. It doesn't have to be in this one. I think Trader Vic's sells Scorpion Bowls and Tiki Bowls on their website. Or if you live near Munich, you can stop by the Trader Vic's there. One of those bowls would be more authentic anyway. Prost!

    Is shaking the drink with only a little crushed ice and then letting it dilute in the glass the way you now think is best for shaking tiki drinks, or is it only the particular style for this and the Tia Mia?

    • @DistinguishedSpirits
      @DistinguishedSpirits  5 років тому

      In terms of the Tia Mia, I like to whip it (shake it with only a little crushed ice). This process it similar. Beachbum Berry recommends blending it instead of shaking or stirring. Either way, you're going to get integrate all of the ingredients, chill it down a bit, but allow the ice in the bowl to do most of the heavy lifting in terms of dilution. That way, it will act like a tradition punch, where it starts off strong and mellows as you work your way to the bottom. It's just a matter of getting the right balance for the dilution. Anyway, hope that helps. Cheers!

    How does the L’Orgeat compare to the 12 bottle bar recipe?

    • @DistinguishedSpirits
      @DistinguishedSpirits  5 років тому

      L'Orgeat is tasty. I still haven't had an orgeat that tops the 12 Bottle Bar recipe. BG Reynolds is too flowery. Orgeatworks is good, but even more floral. L'Orgeat is great, but the 12 Bottle Bar homemade stuff is really amazing.
      L'Orgeat scores some points for being shelf-stable. The 12BB recipe has the perfect thick, syrupy and (very, very lightly) gritty mouthfeel to it. L'Orgeat is slightly thinner, still syrupy, but no mild dusting of that almond meal texture. It's just really smooth. So, I still like the 12 BB better, but L'Orgeat is really solid.
      Plus, L'Orgeat was easy to shoot with it. It acted like a spirit and not a cold syrup with condensation and leaving rings on the bar and finger prints in the beads of condensation. Little things like that. Haha. Hope that rambling paragraph answered your question. Cheers!

      @sctdg01 5 років тому

      I’d rather have too much information than not enough. I appreciate all the content that you make for this channel. 12bb recipe it is. I wonder what all the tiki bars by me use, tiki ti, Tonga hut, lono, trader sams ? Inquiring minds want to know.

      Cool. Thanks for the tip. I hear good things about the PS Tonga Hut. Cheers!

    Why does your voice make me feel like I’m about to be thrown in the back of a van and whisked away??? 😬 Great recipe regardless!

      I don't know, dude. I'm not your shrink. I can't tell you why you're thinking about that.

      对不起,我不会说普通话。 您可以将描述中的文本(位于视频下方)复制并粘贴到翻译器中。 这基本上会告诉你视频中的内容。

    Does this really need that much Orgeat and simple? Sounds like and awful lot. Was thinking of winging this one next weekend for a party.

      It's 3.5 oz of sweet to 6 oz of citrus. It's balanced in this recipe, but if you're afraid of it being too sweet, just start with 2 oz and add everything else, taste it and see how it turns out. You can always add the other 1.5 oz later.
