Voodoo Grog - How 2 Make Trader Vic's Tiki Drink & the History of Pop Culture Voodoo

- Here’s how to make the Voodoo Grog, a tiki cocktail that’s a combination of Navy Grog from Don the Beachcomber and from Trader Vic, only taken to the next level. The drink is made with AOC Martinique Rhum Agricole, Haitian Rhum, Pimento Dram, Passion Fruit Syrup, Honey Syrup, Lime Juice, Grapefruit Juice, Egg White and Nutmeg, with a cherry, dried pineapple and mint for garnish. The drink was created by Trader Vic and decoded by Beachbum Berry.
As explored in Berry’s book, Potions of the Caribbean, a lot of tiki drinks and tiki culture trace their roots more to the Caribbean than Polynesia. With this one, it’s not only the name (explored ad nauseum in the video), but also the flavors and ingredients. The rhums, allspice, the punch-like construction and its similarities to the Navy Grog all point to the Caribbean.
The drink is a cross between the Don the Beachcomber recipe for the Navy Grog and the Trader Vic’s recipe for the Navy Grog. The drink is made up of multiple r(h)ums, lime and grapefruit, just like the Navy Grog. It uses both Donn’s sweetener (honey) and Vic’s sweetener (pimento dram). But then it builds on top of that by throwing passion fruit, egg white and nutmeg into the mix.
The result is a smooth and creamy drink with a really complex and exotic flavor. Because of the creamy texture, I prefer to drink it without a straw. Vic and Beachbum Berry might disagree. And if you want to drink it with a straw, make sure it’s a short one so you don’t miss the incredible aromatics of the nutmeg and mint. That smell is really important and it adds to the whole delicate balance of the flavors of this drink. Okole Maluna!
Recipe:
1 oz (30 ml) Aged AOC Martinique Rhum Agricole (ESB or Ambré)
1 oz (30 ml) Gold Rum (Aged Haitian Rhum preferred)
0.75 oz (22 ml) Lime Juice
0.75 oz (22 ml) Grapefruit Juice
0.75 oz (22 ml) Passion Fruit Syrup
0.5 oz (15 ml) Pimento Dram (Allspice Liqueur)
0.25 oz (7 ml) Honey Syrup (3:1)
1 Egg White
8 oz (240 ml) Crushed Ice
Garnish: fresh grated Nutmeg, Cherry, Dried Pineapple Wheel & Mint
Blend all-but garnish-on High for 20 seconds. Pour into mug or double old fashioned glass. Add garnish. Grate nutmeg.
Original Trader Vic Recipe:
1 oz (30 ml) AOC Martinique Rhum Agricole Vieux
1 oz (30 ml) Gold Puerto Rican Rum
0.5 oz (15 ml) Passion Fruit Nectar
0.75 oz (22 ml) Pimento Dram (Allspice Liqueur)
0.75 oz (22 ml) Grapefruit Juice
0.75 oz (22 ml) Lime Juice
0.25 oz (7 ml) Honey
1 Egg White
8 oz (240 ml) Crushed Ice
Garnish: fresh grated Nutmeg, Pineapple Stick & Mint
Stir together Honey and Lime. Add to blender along with all other ingredients other than garnish.
Blend on High for 20 seconds. Pour into Voodoo Tumbler. Add garnish. Grate nutmeg.

There's been a growing movement over the last few years to stop treating tiki stylings as mere frivolous fun. I think it can still be fun, but paying attention to tiki culture's origins and influences is incredibly important. Videos (and channels) like this do a great job of finding the value in all aspects of the drinks and their history

Eartha Kitt's teacher and mentor Katherine Dunham was a Haitian Voodoo initiate and is still considered America's academic authority on Voodoo. Katherine's assistant was Maya Deren, who around her time with Katherine filmed The Divine Horseman - the Living Gods of Haiti. I have no DIRECT statement that Eartha Kitt was a Voodoo Initiate, but there is certainly circumstantial suggestion and her personal ethics reflect that of Voodoo. Eartha's neighbors in Beverly Hills, and her good friend James Dean referred to her as a Voodoo queen. Katherine Dunham's Dance Company was famous for presenting Voodoo ritual dance on stage... once again, thanks, your presentations are always enjoyable and informative.

Not gonna lie, I got wrapped up in the history and totally forgot this was a drink recipe video. Great work. The "Voodoo 'Macbeth'", the idea of switching up the setting and magic of the play, was a brilliant idea and, as a theater major, I'm surprised I never heard of that production before. Also, thank you for debunking a lot of the myths and misconceptions that Hollywood, Lovecraft, and pop culture in general perpetuate. I'm not a voodoo practitioner myself, but I am a fellow Pagan (Wiccan) and so it's always nice to see people point out stereotypes for being the bullshit that they are. And lastly, of course, the drink looks delicious! Cheers!
Yeah, this was a really fun video to put together. I totally thought it was going to be a quick one, but then got sucked into more of a vortex than a rabbit hole on the history of voodoo in pop culture. Voodoo Macbeth is a classic, but, yes, it's a brilliant idea to reconfigure the setting from the Scottish highlands to revolution-era Haiti. That's Welles for you. Love the video! Would I be able to substitute the AOC Martinique with a Clément Martinique or any other rum? Or would that completely throw off the drink?
AOC isn’t a brand. It just means that it’s certified. Yeah. Any aged Martinique Rhum Agricole will work just fine. Clement, La Favorite, Rhum JM, Neisson. Those brands will all work. I used a lightly aged Rhum (Ambre or ESB), but the original recipe originally called for a Vieux.

What about making your own allspice?
Go for it!
Made a batch for myself, used 45 g of allspice berries and Appleton 12 years. After 5th day added crushed by my mallet nutmeg and a cinnamon stick. After let it staying for 8 more days (couldn’t wait no more lol), I used 1:1 Demerara simple syrup in equal amount of “allspiced” rum, cleared from spice pieces by coffee filter... and boom-ba-da-boom.
The strong hit of spices from the bottle and distinctive herbal bitterness of the allspice berries with thin trace of cinnamon and nutmeg. Also caramel structure of Demerara syrup helped a lot.
After trying it in Trader Vic’s Grog I went all-in and made my fall-winter Negroni and boulevardier... but I replaced vermouth with homemade allspice dram in equal measurements (it could’be less of allspice, judge by the taste), and to even the bitterness and sweetness I used Aperol, as a herbal bitter. Just try this one and you won’t regret. If Negroni changes its skin to the fall-styled, boulevardier makes a few steps for distinguished and rich drink, that makes it super special.

Doesn't a half oz of pimento dram overpower the entire drink? I can hardly handle a 1/4 oz in my rum punch!
