I tried these and they came out well. Made them for a church kid for learning a set of review Bible verses. He really liked them. He finished his next set and asked if I could do a vanilla version? I think it should work but wondered if that is anything you have already tried? I figure vanilla extract in place of lemon and maybe a little cream in the icing....? Have you tried variations? Hello. substituting lemon juice would affect the texture, but you can omit the lemon zest altogether. It will result in less lemon flavour but still be tasty!
I made them last night and I love them, they are like shortbread. The only thing I wanna ask is my dough seemed more on crumbling side; its malleable, but it was still a little crumbled on the edge. FYI, I only have hand mixer and use Canadian ingredients.
I’m so glad that you enjoyed the recipe! If you find that the dough is crumbly to the point that it’s hard to work with you could add a tablespoon of water or alternately you could omit 1-2 tablespoons of flour when making the dough. Hope this helps!
Hi! Unfortunately I don’t think this would be the best glaze to decorate on top of, I would be worried about colour bleed since this is such a wet glaze.

Awe, I’m sorry! If you piped the monograms as transfers as let them fully set before adding them to the cookies, it would reduce the likeliness of the colour bleeding. Alternately I would suggest finding a lemon royal icing recipe and using that instead of the glaze.

My apologies for the late response. By lemon concentrate do you mean lemon extract? If so you could definitely use a small amount mixed with some water in place of the lemon juice. If you’re referring to a lemonade concentrate in theory it should still work however it may yield slightly different (and likely sweeter) results. Hope this helped answer your question
I had to make this in the morning, to bake in the afternoon. So stuck them in the fridge. Also used bobs red mill gluten free flour 1:1 instead of regular flour. I am guessing the flour substitution wasn’t so good as the dough never really cake together. Was crumbly. Wasn’t able to roll it at all. Just broke off chunks and squished into the pan. And ate all the rest of the raw dough (delish). Will use regular flour next time… and bake straight away.
Hello, I do not have experience with gluten free flour but have heard that it can affect the consistency and moisture content to I suspect that may have been the reason. If the dough was too cold it could have also caused it to be difficult to roll. I hope the next batch worked out!

I’m sorry that your cookies didn’t turn out, I know how disappointing that can be, no need to apologize! Are you in Europe by chance? Here in Canada our butter is 80% milk fat (20% water) but I know that some European butter has a higher fat content (around 83% ) so this may have contributed to the overspreading. The most common reason shortbread cookies would overspread would be if there isn’t enough flour to hold the melted fat. If you do decide to try this recipe again I would recommend adding an extra 2 tablespoons of flour if the dough is still really soft/sticky. I hope this is helpful 😊
