  • This video recipe will show you how to make 4 types of melt in your mouth butter cookies, inspired by the classic royal danish butter cookie boxes. These include the round country style, rectangular sugar slice, vanilla ring, and round raisin crunch. Whichever is your favourite, use this easy baking recipe to make them all in one batch of cookie dough. The extra fragrant buttery aroma comes from using Wijsman butter and the lightness of the cookie gives it a real mouth in your mouth feel that makes for a perfect afternoon tea at home.

    -------------------------------------------------------------
    2 cup plain flour
    230g salted butter (use wijsman butter for best results)
    ½ cup caster sugar
    1 egg
    ½ tsp vanilla extract
    ¼ tsp salt
    Additional ingredients for topping:
    ½ tsp granulated sugar (for rectangular sugar slice)
    1½ tbs raisins, chopped (for round raisin crunch)
    Mix butter and caster sugar together until combined.
    Add egg, vanilla extract, and salt and combine.
    Sift in flour and mix until it has a cookie dough consistency and there is no longer any dry flour visible.
    Tip: try not to overmix the dough here to prevent cookie from being too dense to eat.
    There is enough dough to make 4 batches of cookie.
    Round country style shape:
    Take ¼ portion of the dough and place on baking paper.
    Shape into a rough log shape.
    Fold the baking paper over and use a dough cutter to help turn it into a round shaped log.
    Refrigerate for 1-2 hrs right until before baking.
    Slice into ¾ cm thick slices.
    Rectangular sugar slice shape:
    Take ¼ portion of the dough and place on baking paper.
    Shape into a rough log shape.
    Fold the baking paper over and use it to help form a rectangular shape.
    Refrigerate for 1-2 hrs right until before baking.
    Slice into ¾ cm thick slices and top with granulated sugar.
    Vanilla ring shape:
    Take ¼ portion of the dough and place into piping bag leaving some room at the tip.
    Cut the tip off and place into another piping bag with a closed star piping tip fitted.
    Pipe into desired shape until all the dough is used.
    Refrigerate for 1-2 hrs right until before baking.
    Round raisin crunch shape:
    Take ¼ portion of the dough and mix with chopped raisins.
    Place on baking paper and shape into a rough log shape.
    Fold the baking paper over and use a dough cutter to help turn it into a round shaped log.
    Refrigerate for 1-2 hrs right until before baking.
    Slice into ¾ cm thick slices.
    Bake cookies for 15 mins at 160℃.
    Allow to cool on a wire rack and serve.

    2 cup flour - 325g
    1/2 cup caster sugar - 115g
    For your information, the capacity of the cup used in this recipe is 1 cup = 250ml.

    I'm so glad this recipe has been posted. I just bought a huge tin of the Danish Butter cookies and they've changed the recipe! Sacre bleu. The piped one that has ridges, no longer softly crumbles in your mouth. Kind of a harder crunch, like a stale Keebler, Pecan Sandy. So disappointing. I've enjoyed them for decades. Guess I'll have to make them myself.

      The particular cookie you are referring to is called “vanillekrans” (vanilla wreath). They are sold separately as well from other manufacturers - might be able to find them online. Greetings from Denmark!

      @@Yummeth thank you. My kids love danish butter cookies but the ones that we always buy have lost their touch and doesn't taste as nice as years back then. It's just so bland and not crunchy and u can't find the bit and pcs of the raisins. My kids are so disappointed. Last i bought i was left untouched and i gave them to my niece. Esp now they have other brands with cheaper price. Soooo I'm gonna make this on new year. Thanks once again. Bless u!!!

    Omg I made these and they taste like the ones you get out of the blue tin... The Wijsman butter has a very unique flavor that really makes the cookie if you ask me. They are very addictive. I found that piping the cookies was the easiest method, I couldn't get my square shapes perfect enough.

      @@zhiroutan1718 It should be soft enough for you to be able to cream it but not too soft. Ideally, you want it to still be able to somewhat hold its shape before creaming. The length of time really depends on how warm or cold the air is in your home. Hope that helps :)

      Hi there, actually never made these with powdered sugar. You may need to adjust the amount otherwise the texture and sweetness may be different

    Can you use regular butter, if so salted or unsalted. I don’t have access to preserved butter. Will it substantially change the flavor?

      You certainly can use regular salted butter. The taste won't be the same as the classic danish butter cookies but still good.

      Hi there, happy to answer your questions :) the wijsman butter does have a distinct flavour that works really well for making butter cookies, but if it's not accessible to you, you can try using your favourite salted butter to make the cookies. Let us know how it goes.

      Hi there, you may need to adjust the proportions or use measurements in grams instead of cup sizes as these vary (see pinned comments for grams). Try to get a similar consistency as shown in the video before baking and also make sure it's sufficiently refrigerated. Hope that helps

      You can try that however would suggest you mix it until it's fully incorporated and also convert it to the equivalent amount of sugar since caster is much finer.

    Wijsman butter is the legend butter, In Indonesia Wisjman butter is the expensive one and when you using Wisjman butter for your cookies and cakes, it's taste more richer and ofc delicious 😫😫

      Do you mean dividing the dough into 4 portions evenly or are you planning to only make a ¼ amount in total?
      If it's dividing, you could use a scale but actually doesn't have to be that exact so roughly based on appearance is enough.
      If it's making a smaller batch, the gram measurements is in the pinned comment.

      @@Yummeth thanks for your reply, I have tried making it. I used a measuring cup and it said 1 cup equals to 250ml. I mixed them up but the dough seems very watery, it doesn’t sticky like yours. 😢

      @@cpy29 Hi, perhaps the butter and egg mixture was too runny? You could try to refrigerate the dough to firm it up before shaping. If it is still too runny, perhaps you can add in slightly more flour. Just be careful not too add too much flour as it may cause the cookies to be dense.
