I use a large bowl and insert a colander, fill with water, turn meat over and over, empty the water, repeat 5 or 6 times. 3. To prevent the meat from cupping when frying, slice into the meat edges half inch apart. 4. Add peppers once all the moisture from the onions has evaporated. 5. Cut the avacodo into quarters. Twist and the seed will roll out, or easily pull out with your fingers. Hold tip of quartered avacodo and peel the skin down. Cut into pieces.

Baking soda also makes it rubbery, soft butrubbery texture. Next time marinate the meat as you normally would, then peel, and make a slather out of kiwi fruit. It will tenderize your meat, without making it rubbery. Think pepper steak at a Chinese restaurant. That's what they do and that's why it is rubbery. Dont leave the kiwi on for more than 30 minutes, directly before cooking. You wont taste the kiwi.
You can also take any piece of meat and fully wrap it with heavy duty foil (with corners pinched over well).Bake it in the oven on 350-400 F (depending on toughness of meat) Until you start to smell it in your home. Usually 45min to 1hr .CAREFULLY unwrap it to check it's tenderness. If it falls apart and you want it to have the roasted edges just take off the aluminium foil and leave it in for a few more minutes. Easy, juicy, tender everything. And also just season it however you want before you make the foil tent. Oh and a pan under the foil for every obvious reason possible.

Just a tip.....if you put the meat into the freezer, just until it is stiff (not frozen). It will be easier and safer for you when cutting. It looks dangerous the way you did it in the video. I used to be a meat cutter, and I didn't see a thing she did that would make the meat tender unless she cut the meat across the grain, otherwise if you took a tough piece of meat and cut those thin pieces along the grain it still would not make them tender, but I did not read anything in the translation mentioning that. Yes there are many ways to tenderize meat but I do not think baking Soda is one of them !

Yes, they look like scallions. Chives would be milder, all those green parts of the scallion will taste quite hot. Shallots might be a nice substitute.
