Beautiful presentation. I miss my youth living amongst a large populations of Armenians and eating foods in Their Family Style restaurants and bakeries. By chance, I found a store that had some packaged Lavash (doesn't look like the kind I know as it looks more like flatbread to me) but found your video. Now retired, I love to make new things and I will certainly try yours. Thank you so much for the walk back in my memory. You are lovely and your child is also darling!

You need to look into Einkorn flour which is very weak in gluten. America’s wheat has been contaminated by Monsanto. Einkorn wheat is the original wheat God has put on this earth and its weak in gluten and higher in protein and nutrients. Look up: Jovial Foods Einkorn Flour

Awesome! Now I know from where you get lahvash sitting in the USA ! By the way, I saw your naan recipe yesterday. It is also made in clay ovens traditionally. The clay ovens are just like the lahvash ovens but they are above the ground.
There is a bread called rumali roti which is very close Indian cousin of lahvash. Rumal means handkerchief. We call it rumali roti coz its thin and can be folded like a handkerchief.

Yeast is my enemy. Heghine jan, I don’t know if any one suggested how to make no yeast lavash.
I suggest to use baking powder instead of the yeast. Also you don’t have to wait till it rises . It’s instant, neat the dough and make it right away.

You SHOULD try to relax; nothing but good seems to come from your presentations. In fact you rather nervously make lavash making SEEM too easy. It's a personal favourite--although the Iranian variety seems to predominate around here...& in Maryland---and your lessons are most welcomed because Armenian baked goods are delicious but rel. unknown....

I was wondering that as well. She did not mention the amount of yeast, but it looked like a rounded teaspoon. Otherwise, the recipe has 2-1/2 cups white flour, 1/2 whole wheat flour, 1-1/2 teaspoons salt, perhaps 1-1/4 tsp IDY and enough water (?) to make the dough, probably one cup.
