I went to Jamies Italian in Birmingham today, how wonderful was it that Gennaro came to our table and wished my Daughter a Happy 21st Birthday and sat and chatted to us all.He is such a lovely friendly man indeed ! Thank you Gennaro, you made my Daughters Birthday .
Im such a huge fan, after becoming paralyzed from my stroke I dedicated my life to learning more about cooking and now that i can walk . I love my cooking
Dough ingredients: 500 grams strong flour, 1 packet (7g yeast), 325ml tepid water, "pinch" of salt, olive oil. A bit of polenta on the tray, and whatever you want on the focaccia. ...I actually prefer Gennaro's basil-tomato version :)
My daughter and I made this today. I've made a bit of bread in the past, but a fair while ago. But it was my daughter's first time (she's 12). We did potato and rosemary. It worked SO WELL. I love your tip about crushing up little boiled spuds. And the tip about rubbing your herbs in oil before putting them on top is a great tip too. Thx so much for your unending generosity in sharing great cooking recipes with us all, inspiring us to cook for ourselves and eat better. We will be making this a lot more! Shalom.
Married into a mostly Italian family, and we all love our focaccia. Special trips down to San Francisco usually involve stopping at Laguaria in North Beach, SF's version of "Little Italy". Never thought of doing it myself, but I think I know what I will be surprising her with in the near future. I'm thinking oven roasted garlic, cherry tomato, and local mushrooms, with a bit of gorgonzola and shredded basil. Gennaro is a treasure, how fortunate to have him as mentor and friend. Thanks Mr. Oliver and co!
This is a recipe I keep coming back to year after year. I love flavouring mine with either garlic and rosemary or olives. Always turns out perfectly! Thank you Jamie & Gennaro - legends both of you 😘
It's always great and pleasant to see a good Mentor who has got a loving and humorous friendship and chemistry with his well seasoned Apprentice. Love their bonding as both great Chefs inspire the world with full of friendliness and joy! Gennaro-Jamie all the way!
I've done this recipe about 10 times now...... I had to watch the video a couple times until I got the hand of it but it always turns out great! Everytime I teach someone I say "put olive oil, you need to feed the focaccia"! Thank you guys! Love Gennaro.... Jamie too!
To me the trick is the 40 mins rest and then you put the oil... i do it generously enough so that when it's in the oven it penetrates the dough. and when i take out of the oven I put some more... Don't really measure so I cant say exactly how much. Maybe it's not an oil problem, maybe it's the dough that is not being developed enough.....(?)
Oh Jamie, I know U are not going to see my comment but I have followed U since I was in my country, Venezuela, U have a UNIQUE mix: professionalism and the best sense of humor in a chef. Thanks for existing and being so explicative in the kitchen, much of what I have learned of meals is thanks to U my dear🤗❤️
Yummm. Look at you two, cooking with flour, all dressed up! You two are definitely pros! :) I haven't made this in years but I love it with shallots, black olives, and feta cheese.
Warmest Greetings, Jamie Oilver. My child is truly inspired by your show. She made the focaccia for 5 consecutive weeks. Since then, she enjoy baking and cooking. Thank you very much. Good job. Well done.
Love Gennaro - his recipes our fantastic and I have been watching the video clips and now I am making great risotto, bread and focaccia and it was you Jamie that started me off and I have never made such a variety of food thanks heaps for all your wonderful recipes
Easiest, quickest yet yummiest Focaccia ever!! made it 4 times (in 2 weeks), adding different ingredients each time and the results were a hit with everyone :) Thank you Gennaro & Jamie :)
I love watching you guy's together, I'm a redundant Baker of 25 years and I'm making focaccia bread to go with dinner later, it's the ultimate sharing bread for family suppers, all the best to you guys xxx
I love Gennaros version. Tomatoes and Basil is a combination made in heaven. I might try this soon, just waiting until we have our own basil in our garden (I am obsessed with herbs so we often have 3-5 different kinds of basil). Maybe break up some freash mozzarella and put it in with the tomatoes and basil and become gooey... I need this! 😁
I totaly fell in love with your personality Gennaro, found your videos only couple of weeks ago and they have brought so much happines to my day. Thank you for having so cheerful lovely personality. Tried your Lemon Pasta - First video i watched... incredible. Thanks from Slovakia
I have made this now already 3 times and I have in oven baking and the songs is gorgeous. Absolutely love this recipe. Couldn't get better. THANK YOU MY 2 FAV PEOPLE !
Love how he makes a list of how many types of Focaccia that can be made, while his other buddy Jamie is adjusting his collar, and the music in the background - AND let’s talk about the suits and style - just adds to the flavor. I can’t wait to make this!
I think chefs COOKING should keep their hands off of other people. If one is just so tempted and can’t keep his hands off of another person, turn off the camera and do whatever it is. But this was too much. Gross.
Generally I find Jamie makes cooking/baking look too easy ......... but in this case IT REALLY IS! I have tried quite a few versions of Focaccia over the years and this one (well the Basil and Tomato one) is a keeper! Thanks Jamie and Gennaro :)
Love watching both of you work together. Had the best meal ever in Jamie Oliver resteraunt in Liverpool. I am making today with garlic olives and rosemary. Thank you so much for sharing your recipes. XXX
Jamie and Gennaro, I love focaccia and it is so versatile......and good. Gennaro, you have my Respect and Heart. You are a gifted cook. The last 6 minutes has been enjoyable watching this video. Thanks :)
Me too. Something about Genaro, and HIS mentor Antonio Carluccio I adore.(And , secretly, I thin think that has been a big part of Jamie's success.)Wonderful to see Jamie has embraced his roots and we get to see the lineage.LOVE, LOVE, LOVE it ! ! !
It IS bread, so it will last as long as you want it to, depending on how you store it, but it also has a lot of oil in it so it won't dry out that quickly
Saeed Mohammed Foccacia doesn't tend to last that long - I would say a day or two, before it gets pretty hard and unpleasant to eat on its own. Of course you can dry it later to create some croutons for the soup/salad or just make some home made breadcrumbs.
Omg.... Drool! Maybe just maybe i will gather the confident to actually do this bread. It will be a huge success to serve it for my Italian in-laws and be like 'I'm the only Asian in the family and yes I'm baking your traditional bread'
Sarah A Using good Olive oil will always earn you extra points with Italian families, also try to avoid overcooking pasta if you happen to make any for them at any point, they really don't like that lol
Sarah A Definitely you should give it a try! And if you're not used to be baking bread, don't worry if it doesn't go amazing the first time, it's normal. Try hard and impress them...!! PD: Just like NutmegPluto said, ingredients are the key.
Sarah A italian people and bread have a very peculiar relationship. In the old days, bread whas the only staple most families had on their table, except in the mountain regions where polenta took the place of bread. A meal consisted of lots of bread and a little "companatico" to lend in some flavor. At the same time, bread was 8and to an extent is still) very regional. Each Italian city and town has its own type of bread or even more than one type. For instance, in Milano the traditional breads are the luxury "michetta" made with white flour and the cheaper (the once cheaper) pan de mej, made with lesser grains. The style of focaccia shown here is a cross between the one made in the Liguria region (which is flatter though) and the one made in Apulia (where riced potatoes are added to the dough). In both cases, focaccia was eaten as a cheap lunch on its own, while most Italians still eat bread as a side to each and every food they get served (except pasta, risotto or polenta). Therefore, you may want to serve the focaccia as a starter and maybe keep a little handy for snacking.
What a great team. You put love and joy into what you cook. Thanks for me smile. I'm making an Italian theme dinner today for my amazing wife and this will start us off.

what is strong flour?

I love Gennaro. he looks badass with suit and chain necklace. like an Italian mafia who work as a chef as his side job.
Fadli Ramadhan,
Hey hey hey, watch your pie hole mouth.... your talking bout Gennaro...

He is not an Italian mafia, HE IS THE BOSS HIMSELF

hi elis but mine didn't come out very spongy though soft and tasty what could be the reason for this.
How much oil did you "feed" it with when it came out of the oven?
I just brushed it with olive oil but I had put a generous amount of oil before as per your recipe.
May be yes ,I will try again and Will let you know about it if it doesn't goes as per the way it should be. Thanks

if you want it to last longer than a day just cover it well from the air, otherwise it dries up quite fast
Saeed Mohammed an hour or less if it's good enough!
