    Looks good, but after decades of trying various keto chicken recipes, I’ve learned a thing or two. 1) pickle juice brine imparts most flavor and juiciness; forget the buttermilk (don’t believe me? Do a taste yourself with both at the same time). 2) only seasoning, no junk like whey protein powder. To make it crispy, pat dry the skin thoroughly, let dry out in the fridge on a rack (the Chinese use portable fans to accelerate drying). Poke the skin, then bake using super-convection or an air-fryer. Tasty crispy chicken.

      I don't like the protein powder either or all those seasonings. I normally just use salt, garlic powder, onion powder, and jalapeno that I dry myself and grind in a spice grinder. Thanks for the tips. I'm gonna use the poking the skin one. Mine always bubbles up. I may use a sprinkle of vinegar too instead of the pickle juice to add flavor and see.

      @@akbananachucker2441 Instead of whey protein powder or anything else, try pork rinds. I buy them in the store, crumble them up in the bag and use that as my "breading". Gives an awesome crunch and pork rinds are keto.

    This looks awesome! Super excited to make it. I had triple bypass surgery at 50 and I was not in bad shape. Ran, lifted, went on long backcountry hunts where I'd hike 15-20 miles. I thought I was in great shape. Went for some routine blood work and had high cholesterol. Calcium score was bad, CT A was bad. Ran the camera up there and I was totally clogged up with ZERO symptoms. Scheduled my surgery and changed my entire diet. Lost 30 lbs before surgery and another 10 since. I'm a week out of the hospital after a 6 day stay and fortunately it went great. I am never eating crap food again but it's hard to totally relearn to cook. Can only eat so many vegetables and broiled fish. This will be a great treat every once in a while!!!

    As a lifelong cook and chef I have a small tip (two cents worth). You can safely pull your chicken at 158-160 degrees and the residual heat will continue cooking for another five minutes easily finishing at a safe temp of 165, making for a juicier finish than pulling it at exactly the recommended temp. P.S. It is fun to see the energy between your gregarious self and introverted wife, ha.

      I do this with white meat but not dark, as dark is supposed to go to 175 and often looks bloody even then.

    Sounds delish! I make my own version. I spice the chicken, dip in egg wash and then in ground pork rinds. I cook in my air fryer. FANTASTIC! My husband loves it and so do I.

    Nice alternative; thank you! We use similar spices with an egg wash and coat with crushed pork rinds then bake it on a grate over a foil covered cookie sheet, shiny side up, convection oven. Somewhat similar finish without the use of any oil.

    I developed a method to cook the chicken sous vide before frying. This was before I went keto about five years ago, but the value is you KNOW it's done when the outside is. Basically, you cook the chicken at 145ºF using sous vide for 45 minutes, and chill it, then you do exactly what you normally do, but you get to take it out when the outside is done. The chicken stays moist as the outside cooks.
    I may give this a shot.

      Yeah I've noticed they both look *younger* in their later videos than those over the last four years.
      I really think 'taking care of yourself' can get you aging in reverse to some degree. I've seen it happen with lots of people, both in media and in person.

    You can also just put about an inch or even 1/2 inch of oil in your pan and then flip your chicken when it's half-way done. That's all you need for most foods, uses less oil and still gets you a great fried chicken!

    Cooking with whey- I've been looking for this. Thank you so much! For some of the other comments regarding the pickle juice, well that's basically vinegar and vinegar is magical. If you want to get really tasty juicy chicken, you can also use high fat Greek yogurt because yogurt will break down and tenderize the chicken naturally. It is truly yummy

    I’m surprised using whey protein??? One of your short video on Whey protein is that it’s highly inflammatory?? Why suggest this if it’s not good for the body ??
    But it looks delicious, I think I’m going to use pork rinds or almond flour.. better way to go !

    If you add salt black papper red chilli powder hot spices ginger garlic lemon juice marinate in milk then coat flour and fry. We use these spices in Pakistan. It will be equally good.

    Here is the recipe I wrote it all down and then put it down below. The only change I made was to let the spicy protein powder stick to the chicken for a few minutes before you fry it so it doesn't peel off in the oil right away.
    Dr Berg keto chicken
    2 tsp salt
    2 tbsp white pepper
    1 1/2 tsp black pepper
    1/2 tsp celery seed powder
    1 tsp mustard powder
    2 tsp garlic powder
    1/2 tsp oregano
    1 tbsp paprika
    1 tsp chili powder
    1/2 tsp rosemary powder
    1/2 tsp sage
    Mix the spices in a bowl.
    2 1/2 cups of buttermilk
    Four eggs
    Add 1/2 of the spice mix.
    Soak your chicken in that buttermilk mixture overnight.
    2 1/2 cups of unflavored whey protein powder.
    Add half of the mixture of the spices to that protein powder.
    Coat the chicken in that powder mixture and set aside for a few minutes so it sticks to the chicken.
    Heat avocado oil a few inches in a pan 350° cook the chicken to an internal temperature of 165°.

    I buy chicken thighs and debone and remove skin (save both for stock) I would stale Naked Bread (as close as I could find to pure) and run in my food processor to a well chopped or dust us that as my breading.

    sounds perfect! I've tried every keto fried chicken idea except the one with protein powder! have you tried frying it in an animal fat!? like beef tallow or Ghee butter!? that's been my breakthrough! especially ghee butter! fried chicken with a buttery taste throughout

    I'll have to try this spice mix and the buttermilk. Have you tried Victorias Keto flour yet for breading? Just tried it for the first time with some shrimp tonight and it fried up great. What got me here looking up some chicken to try next. Anyway, keep up the great work! always love the recipe videos.

    KFC let a journalist look through their stuff and the original recipe was written in a sheet of paper. You can find the photo online:
    KFC SPICES
    Spices, mix with 2 cups white flour:
    1. ⅔ TS Sal
    2. ½ Ts Thyme
    3. ½ Ts Basil
    4. ½ Ts Oregano
    5. 1 Ts Celery Salt
    6. 1 Ts Black pepper
    7. 1 Ts Dried Mustard
    8. 4 Ts Paprika
    9. 2 Ts Garlic Salt
    10. 1 Ts Ground Ginger
    11. 3 Ts White Pepper

    Dr Berg, I know that you are originally from Wisconsin, but I don't know where in Wisconsin. I am in N.E. Wisconsin. I am going to assume that you are familiar with the Wisconsin custom of going out on Friday evenings for a deep fried lake perch dinner. Do you think this recipe could be used to make a keto version of deep fried lake perch? Or do you have a better suggestion? You also probably know that french salad dressing is very popular in Wisconsin. My favorite is Kraft Catalina dressing. Do you have any ideas for a keto version of this? Thanks

    Looks great for a guy like me battling a high A1C. But I did the workup and we're looking at about $30 for one batch of fried chicken, or about $5 per piece. I'm not rich, so I'll have to stick to oven roasted thighs. Soaking in baking soda and water also tenderizes chicken breasts really well.

      Yes, just spray them with a bit of Avacado oil instead of deep-frying. Bread them, set them on a rack and spray them on one side and flip them over and spray again. Watch out for the temp on those though and mine is hotter than some. I noticed that if I follow most peoples recipe for air fryer chicken, it will be over-cooked.

    No no avocado oil is very expensive in Hungary so I will keep frying with sunflower oil and breadcrumbs because I have no money!

    I agree with using ghee instead of oil, we always used ghee and my Mother would use Only QBB Ghee!
    They pulled off the shelf today as they introduce healthier alternative viz Ol!
