    I love the idea of béchamel (don't always have heavy cream on hand) but what really sounds fabulous are the mushrooms! Can't wait to try this!

    I'm definitely going to try this recipe, my husband loves chicken Alfredo but it's not good for either of our hearts with the cream, this looks delicious. I love cream in certain pasta and meat dishes but it's too much. Thank you, you have great recipes. Diane

    I did like the idea of using bechamel, Beth! And yes, mushrooms all the way! I think a few peas wouldn't hurt and give it a pop of color. :)

    Looks delicious, Beth! Think I will make it some day soon , leaving the chicken out , because my son is a vegetarian...will still taste great, I suppose ...So thank you for another great recipe!
    What I do when making bechamel, is adding the liquid little by little -stirring as I go- to prevent any lumbs and to be able get the right consistancy. And a great tip my aunt taught me, is to leave the skin on while pressing garlic. That way, when you remove the skin out of your garlic press, all those little bits which annoyingly stay behind in the press after pressing , will come out right away, leaving you with a clean press! Try it, works like a charme!
    Oh and what wanted to say: your self-shot videos get better and better, you ROCK, Beth! Love & Hugz

    Hello from Maryland! Chicken fettuccini is such a crowd pleaser and so easy to modify for my vegetarian family members. I also plan to use some rotisserie chicken when available. Thanks for an excellent rendition, Beth!

    I love that you mentioned the measurements in grams etc. The conversions cup to ml/gr is so tedious when cooking! Same for temperature!

    When I need shredded chicken breast, I cook it, remove the bones and skin, place it in a bowl and use a hand mixer to shred. Works great. Try it sometime.

      Ha! Yes I know it's hard, but I'm pretty active! I do yoga 1-2x a week, treadmill in-between and an aqua flex class on the weekends :) So it all balances out! :)

      I add a little piece of a mushroom stockcube. But I go easy on the salt because mine are salted. Greetings from the Netherlands

    Can I 'dare' you that next time you would do a cream based sauce, try rice-cream? It's almost the same texture, same feeling, and would made it completely lactose and milk-protein free! :D Would be cool maybe to see you try it!

    Btw, did you seasons the pasta while it's boiled? Is it really need some oil and salt?

    I actually prefer the milk recipe. I feel like it’s not as heavy and the sauce is smoother. The cream makes it heavy IMO.

      It's the smell, but mostly it's the texture of them. I just can't do it!

      @@heidid5275 It's "earthy" which most of us equate to dirt. I was the same way when I ate beets. But I learned to love them (roasted is the way to go first). I think for most foods, if you don't like it after 7-8 tries over a period of time, you won't ever like it. There are very few foods I don't like after 7-8 tries - even blue cheese got my love at about the 4th try and now it's my favorite cheese. Go figure. :)

      I hear ya Gurly. I'm a chef by trade. Cook with shrooms all the time. But I simply cannot eat them!!! I've tasted them a thousand times ( to check seasoning) and if I get a big piece, in the trash it goes! Lol.
      I think you hit the nail on the head, they taste like dirt. Not to mention that they are a fungi. Spongy, disgusting, little bits of ......oops. 😁 Stay safe.

    I don't have Parmesan cheese available in my country , plus I can't consume cheese. Is there any way to skip it or any other alternate for this? Thanks Beth

    The last time I was at the market, I witnessed a woman pick over every mushroom and every mushroom she took, she snapped the stem off and left it in bin. 😦I hate people. This recipe looks delicious, I just loaded up on skin on, bone in chicken breast, can’t wait to try it.
