    This week we're making a delicious sheet pan dinner that roasts the chicken and vegetables on one pan at the same time. The easy couscous side dish comes together in less than 6 minutes. A great weeknight dinner idea or Sunday night dinner!

    BETH'S CINNAMON ORANGE SHEET PAN CHICKEN WITH COUSCOUS
    Serves 4-6

    INGREDIENTS:
    FOR THE CHICKEN:
    8 Chicken thighs, bone-in, skin-on (4lbs) (1800g)
    ½ tsp (2.5ml) kosher salt
    2 tbsp (30ml) freshly squeezed navel orange Juice
    1 tbsp (30ml) olive oil, separated
    ½ tsp (2.5ml) ground cinnamon
    1 tsp (5ml) dried parsley
    Salt and pepper to taste
    FOR THE VEGETABLES:
    2 cups (300g) Vidalia sweet onions, cut into ½ inch thick wedges
    2 cups (300g) carrots, cut into 2 inch long pieces and then sliced in half, lengthwise, on the diagonal
    3 garlic cloves sliced thinly
    3 tbsp (45ml) olive oil
    1 tsp (5ml) curry powder
    ¼ tsp (1.25ml) kosher salt
    Freshly cracked pepper to taste
    4 Navel orange wheels, sliced ½ inch thick, cut in half
    FOR THE COUSCOUS:
    1 cup (240ml) of water
    2 tbsp (30g) butter
    ½ tsp (2.5ml) salt
    1 cup (180ml) couscous
    1/4 cup (40g) raisins or currants
    ¼ cup (40g) Golden Raisins
    ¼ cup (40g) raw shelled pistachios
    1-2 Tbsp (15-30ml) Fresh Mint
    METHOD:
    FOR THE CHICKEN AND VEGETABLES:
    Unfurl the chicken thighs so that they lay flat and the skin is stretched as far as it will go. This will allow the skin to become crispy. Place the chicken thighs on a sheet pan, spreading them out so that they have room in between them.
    Season each thigh with a good sprinkle of salt, underneath the skin. Then brush the skin of each thigh with the olive oil. Sprinkle the top of each thigh with the cinnamon, parsley, and salt and pepper to taste. Set the tray aside.
    In a large bowl combine the onions, carrots, and garlic. Add the olive oil, curry powder, salt and pepper, and the juice of half an orange. Toss to coat.
    Add the vegetable mixture to the sheet pan, placing the vegetables in and around the chicken. Add the orange slices evenly distributed on top of the vegetables.
    Place the tray in a preheated oven at 425F for 45 minutes. Once done, keep warm in a 200F oven while you prepare the couscous.
    FOR THE COUSCOUS:
    Place water, butter, and salt in a medium-sized pot. Bring to a boil. Once boiling, add couscous. Turn off the heat and cover for 5 minutes.
    Fluff the couscous with a fork and then add the currants, raisins, pistachios, and mint. Toss together and transfer to a serving bowl.
    TO SERVE:
    Transfer the chicken to a plate momentarily so it's easier to get to the vegetables and the sauce. You'll place the chicken on top of the platter last.
    Transfer the couscous to a large platter. Spread it out so it acts as a bed. Then with a slotted spoon, transfer the vegetables on top. Then add the sauce that formed from the chicken on top of the couscous. This is "to taste" so only add as much sauce as you like. You can also reserve the rest to serve alongside the chicken in a gravy boat.
    Place the caramelized orange wheels around the platter as a garnish. Then place the chicken on top of the couscous and vegetables. Garnish with freshly chopped mint over the whole platter. Enjoy!! xx

    I’m living alone for the first time and wanted to give a big thank you to Beth! I’ve picked up a lot of basic cooking and baking techniques from your videos, and I’m having so much fun trying them out in the kitchen of my new bachelorette pad. This chicken dish looks like another great recipe to make ahead for the work week-excited to give it a try!

    Thank you Beth! We love to use chicken thighs here at our house! They are one of the most affordable and versatile meats and quick cooking especially when you have 4 kids including 2 teenage boys haha! (They also make easy portions sizing! No slicing and dividing between all the hungry kiddos!) We often make them on the weeknights when we are in the middle of football, basketball, ballet and tennis! Just throw them in the oven on a sheet pan while everyone gets their showers and voila dinner is ready. I haven’t made couscous much but I do like it and this looks delicious.

    OMG! I have just made this and I’m in love! (I didn’t have the mint because when I checked the recipe, I only used the ingredients List to add to my grocery list. It will be much better next time I make it! I particularly liked the carrots - I usually don’t eat them because I find them too sweet but between the curry and cinnamon they were just perfect!

    Hello Beth i just have to say i love watching your videos and have made a few of your recipes. I made the orange cinnamon chicken this evening and it was delicious and as you mentioned budget friendly!     This looks and sounds great! I agree that chicken thighs are very moist, flavorful and much less expensive than breast meat. Oranges, raisins, cinnamon, curry ... can’t miss with that flavor combination.

      I'm so glad you think so! Of course I show my husband and he can't tell the difference?! And I'm like WHAT! LOL! But I knew you guys would and I would and that's what matters most. It's my perfectionist tendencies Just to make it look as good as it can be. Not totally "there" yet but the road looks more promising! :)

    Beth, just had to let you know i tried this out for dinner last night. My husband was very leery, but was willing to give it a try. (And even I was nervous, as this type of cousine isn't my usual.) Oh my word! It was a hit! Flavorful, easy, and made the whole house smell fantastic. His only question: any suggestions as to how to prepare this with boneless thighs? Thanks again for sharing this recipe.

      Aww I'm so glad it was a hit! So yummy right?! OK if you wanted to do the boneless thighs, just give the veggies at head start of about 10-15 mins, then add the thighs on top. Since the boneless thighs will take less time to cook than the bone-in, and you want to make sure the veggies are done too! Hope that helps and hope you enjoy! :)

      I'm so glad you like it! I just LOVE these new cameras, so much easier to use and better looking footage! I'm using the Canon 6Ds DSLR cameras. What's great about them is they have a tracking auto-focus that follows my face when I move around, flip monitors so I can see what I'm shooting while I'm in front of the camera, and touch screen focus, so if I'm in front of the camera I can touch the monitor to get it to focus on the area of the frame I want in focus. Pretty cool huh? :)

    Beth, this recipe looks far too fancy for just a week night dinner - I'm saving it for a special Saturday film night dinner.
    Also, George looks like he is doing really well, it's so good to see him up and about, just checking that the filming is going
    well! Camera is a huge improvement, and the results are fab! (quarantine has taught us so much, no?)

    Fun fact: sweet onion is called sugar onion in my language :) And they are actually my favourite kind! Also, I have to try this recipe. I feel it’s a good one for autumn which is definitely in the air already in Poland! :)

    Missed ya! Love the camera quality (but I honestly tune in forbyou and the recipes so not a huge deal breaker for me) but I can not wait to serve this at a family get together! We rotate houses and next weekend is out turn. Think I'm going to go rogue and just make it for the 1st time next weekend!🤞🏾

    It sounds like a little thing, but I love hearing you say that you will be back after you wash your hands. I am pretty fastidious about hand washing and handling food safely. I cringe when I question whether those I watch prepping food are doing so (touching faces, double-dipping when tasting, seemingly rinsing as opposed to washing hands or even just wiping hands on the same cloth after handling raw meat). I don't think we can afford to take chances on getting sick or making someone else sick.😊

    oh beth!! the camera quality is so good!! what equipment did you switch to?! i’ve binge watching all of your videos this week, 3-5x each LOL. i baked your blueberry cake yesterday and cried because i accidentally melted the butter for the crumble (it was my last bit of sugar lol) BUT i saved it by turning it into the crumble recipe for your coffee cake!! the cake is so moist and delicate 😍 thank you!! can’t wait to binge your videos again during the holidays haha

      I'm so glad you like it! I upgraded to the Canon 6D cameras because of their awesome auto focus function! I need to work on the framing a bit ( a bit too close on my face at times ha!) But that's an easy fix I think. So glad you are enjoying the recipes! That coffee cake recipe is one of my favorites! During the first lock down we were making it every weekend lol! Now we've tried to become a bit more responsible know we are in for the long haul and the holidays are coming lol!

      LOL! I know I didn't realize he was walking around back there until I saw the footage LOL! He's doing SO great! Walking up a storm, with a bit of a limp, but seriously he's made a miraculous recovery! On my Instagram George has a little Circle Highlight and the last post in it he a video of him walking to his bed :) You can see what a champ he is!
