    I made this in my 8 qt Instant pot using boneless & skinless thighs. Because no skin, I used chicken broth instead of water. 2 cups rice and 2 cups broth. Came out great! I have had the pot for a number of years now and made a lot of things, but I love the simplicity of this recipe. Subscribed, Thanks!

    This is by far my favorite instant pot recipe. Season it any way you want, add in some veggies. Great for meal prep.

    I love this recipe. It is kinda like chicken rice casserole but healthier and easier than using an oven. Maybe it is time to get an instant pot…

    The CDC says DON'T wash your chicken for fear of salmonella spread.

    The only problem I can see is that brown rice only takes around 20 minutes to cook in an pressure cooker. Much more than that and it gets mushy.

      @Frank_42 ...if you're concerned about the rice, it may not be a problem if you add one more step and pan sear your chicken thighs nicely on each side first, then deglaze the bottom, add he rice and pre seared chicken instead of starting out with raw chicken thighs, then you can set the time for 8 minute with a 10-12 min NPR you should have the best of both worlds:)
