I use roughly 3lbs boneless chicken thighs cut into 1 inch or smaller chunks Sauté the onions and carrots for 10 minutes then add the chicken stirring occasionally for another 15min. Add 3 cups of chicken broth 1 can of coconut milk 2 cups jasmine rice Cooking for 7 mins instead of 10 keeps the rice from turning to mush. I immediately release the pressure at 7 mins stir in the cheese and take right out of the pot so the rice stops cooking. Thanks for all your videos and great recipe choices❤

I have made this recipe three times in the Instant Pot and I love it. I have a 3 quart Instant Pot, and I use 1 cup of rice and 1 and 1/4 cups of water. I use one piece of chicken (I used chicken thighs) cut up and I use a handful of veggies. I make it a little different than in the video, and I use spinach along with the carrots, and I use different spices - cloves, garam masala, cumin, and cayenne pepper. And I use a bay leaf! This is a great recipe because you can tailor it to your needs. Thanks!
This dish is soo delicious. I made it last night with one little change. I did 3 1/2 cups of chicken broth and added a 10oz can of cream of chicken soup. The family crushed it. Thank you so much for sharing.
You know what? I almost thought about adding Cream of Chix soup. But ended up not doing that. I guess I wasn't sure how much to add or if I needed to change anything else to incorporate it.
Just made this and it’s DELICIOUS! Few changes I made: -chopped carrots instead - I did 2cups chicken broth and two cups of 2cups water instead -added the perfectly cooked garlic in the end Definitely a once a week meal!
Hi, I made this today and it was delicious. The rice was a tad overcooked so next time I will reduce the pressure cooking time. I added some finely cut celery. Next time I shall add some peas.
Made this today using one of our jumbo Cornish Cross meat chickens & this will now be on my monthly menu! This was one delicious meal!!! After taste testing it when it was done, I mashed the garlic cloves into paste like consistency, stirred it in & voila, instant flavor boost! I served it with baked sweet potatoes. I made it tonight! SOOOO good! I've seen comments that the rice was "mushy" but this type of recipe isn't supposed to be fluffy ice. Your video shows that it's supposed to have a moist, creamy texture. I loved the sweet taste of the onion. VERY good!
I just made this and its very good! The garlic was so hard to cut that way😂😂😂 but this rice has so much flavor. I didnt have parsley but id reccomend it for better color! Id also add more salt for the chicken as mine didnt have a lot of flavor. The rice does make up for that though. Thank you💕

Update: I made this recipe last night using turkey broth that I had made and then I added a little bit of thyme and curry with sweet peppers (added while sautéing the onions and carrots). Made this tonight exactly as you did with the only sub being long grain (that I rinsed well to cut down starchiness) instead of jasmine rice. Outstanding recipe. The garlic and the parm work perfectly. Will absolutely make again.
I had the same problem. I think I over sautéed the onion and carrots, creating more water? I’m not sure. I’ll try it again with less sautés time to see what happens.
Ounces and fluid ounces are different. Basically just add double amount of broth. If you used 1 cup rice, use the same measuring cup to get twice as much broth.

Did have this 4 dinner last night! How you prep 1st made the re ipe just flow when cooking started! So easy simple & delicious!!! The garlic bits!!! Yum!!! Made stuffers pita bread & lettuce in burritos with the rest. Made 3 dinners!!! Score!!! TFS!🤗
I wish you were here to do the taste test, it will change your mind 😀. You want the rice to be creamy, that's why it's dry. If rinsed, starch is removed.

My mother and sister have been using your recipes for some time now. They get all giddy about trying your recipes and I just never really thought about trying 1 for myself until today! Having a newborn and having to feed a growing toddler, a teenage boy and a grown man I needed something fast, easy, and filling. I can now see the excitement when my mom and sister try a new recipe. We all enjoyed this dish and went back for more. And we have some left over for lunch tomorrow . Yum! Thank you. I tweaked it a bit with what I had in the house but it came out amazing. I used Jasmine rice also. Didn't have a whole garlic on hand so added some minced. Was a huge hit.

I did not have parsley either. I would throw in some peas next time. Dish looks a tad anaemic without Another colour but it was yum anyway.

Yeah I love my garlic! It adds so much flavor to the dish and it's healthy too.

I made this tonight and it was very good! Only changes I made was I did not add any salt, I added a little poultry seasoning and a little thyme. Will make my C & R this way every time from now on!

My mother and sister have been using your recipes for some time now. They get all giddy about trying your recipes and I just never really thought about trying 1 for myself until today! Having a newborn and having to feed a growing toddler, a teenage boy and a grown man I needed something fast, easy, and filling. I can now see the excitement when my mom and sister try a new recipe. We all enjoyed this dish and went back for more. And we have some left over for lunch tomorrow . Yum! Thank you. I tweaked it a bit with what I had in the house but it came out amazing.
