    You can turn soggy egg rolls into crisp ones by putting them in the stove for a few minutes. It works wonders.

    Larry, these are obviously much better than what we get at the Chinese restaurant at the corner! Delicious!! I thought egg rolls had pork inside, but yours has shrimp! I love shrimp too! You may think that egg rolls could not be made low carb, but I just stumbled on a recipe for them. The crispy shell was made of two criss-crossed pieces of prosciutto, and the rolls were fried crispy! LOL! Who knows if it would work! Thanks for a great recipe my friend!

    I made a pizza variant of this. I cut up pepperoni, black olives, mushrooms, and mixed mozzarella, cheddar, and provolone. I like to mix garlic and Italian season with it but it's OK with it. Roll it up and fry. Dip it in pizza sauce for the complete taste.

    Just a suggestion, but a great way to add that little extra flavor that will take these over the top is to stir in a dash of sesame oil after you take the mixture off of the heat. If it's added while on the heat it will cook away the flavor. It really does ad that extra yum factor that will make all the difference. I hope you try it. Great video, take care, Dee 😊👍

    Egg rolls are really part of American-Chinese cuisine, not Chinese cuisine. In Chinese cuisine, there are spring rolls, but they are not fried at all.

      buying all these ingredients. may as well just buy a few egg rolls at a restaurant. those egg roll wrappers at my local store do not taste good. Go to a Asian supply store if you can

      yes!! I tried them the other night when I made cheese steak egg rolls and they were delish. I was a little worried too but they came out crispy and they let the flavor of the filling come through so you dont just taste greasy egg roll but instead, you taste the filling. Hope this helps.

    Chinese take out is very oily! It's nice when you learn to make your fave take out orders at home so you can control everything and make it taste as good. I'm still trying to master the sweet and sour chicken, lol. They look great Wolf! TFS! :))

    Looks cool. I'm going to find some egg roll paper things tomorrow. Never seen them in Canada actually. Hopefully I can find them. The Chinese restaurant I like uses bean sprouts inside. I think ill cut back on the cabbage for bean sprouts as I don't like cabbage that much.

    I had egg rolls back in the late 70s. They were huge and great. I played and played trying to recreate the recipe. Well,. I was over thinking it. It was just cabbage and shrimp. Nothing else. I can cook some like your but everyone prefers the simple 2 ingredient

    This looks GREAT! You just forgot to add 1 thing. Fry them twice. When they start getting just a bit brown, take them out and wait couple minutes then fry the second time or put in freezer until you are ready to fry second time.

    We like to mix chinese mustard with katsup, straight chinese mustard can take your breath away for a second. Chinese chili sauce and plum sauce is good too, sweetened soy sauce is fine.

    I was tapped by another channel to do the egg roll challenge TAG. I'm gonna do this recipe. It looks easy and delicious. Your video is done so well with straight hittin points. Wish I could do that. I yap too much. The guy at Free To Cook has your style of video. His vids are great and only 2-3 minutes.     Dude. DUDE! Thank you so much for having this video. I just made my first egg rolls today and the recipe did not suggest using egg on the edges which helped glue them together a bit. A few did break but that was due to the dough warming up and sticking a bit but I will definitely make them ahead of time, stick them in the fridge and pull them out when ready to fry next time.     well i made this today. the first 4 came out looking like they were in hell being tortured. I got distracted with email and forgot i had them in there. but i also had way way too much oil and they refused to turn. the second batch looked much better after i dumped half the oil but still had to fight to keep flip them and could've use two more hands.and the last batch even better after getting rid of even more oil. even the burnt ones were tasty but wife wouldn't have any of those. ..Lesson learned.. very little oil like 1/3 of thickness and no emails or cell phone.

    Chinese mustard is dried mustard with water..such as Coleman's dried mustard..the longer it sits the hotter it gets..a must for egg rolls..😉

    I like Vietnamese Egg rolls 100% better than Chinese Egg rolls they put more meat in their egg rolls than Chinese Egg rolls all you see is more cabbage than meat in chinese egg rolls

    I think draining the filling on paper towels will get paper towel pieces to stick to the filling. Ive done that with bean sprouts and had to pick towell scraps out.

    So the difference between crispy egg rolls and soggy ones, is how they are left to drain, huh, interesting. Gotta try this. Drain them on a rack instead of on a paper towel, got it.

    I don't know why I never thought of the bagged cole slaw mix. It's exactly what I spend all of that time (and the bloody knuckles) shredding myself. Duh...
    It's also worth noting that you can also use slivered or shredded beef, or pork, or yardbird, in place of those baby shrimp whose mamas you just really pissed off.
    I have yet to figure out why, but I consistently get better results frying these in a cast iron skillet than in the deep fryer. Same temp and same oil in both. A puzzlement.

    I'm with you on your pet peeve. However, I have a pet peeve of my own: The sad, watery, vinegary Chinese mustard that comes in plastic packets. It has nothing to do with the thick, fiery stuff they actually serve in restaurants.

      +David Slone Funny story about the mustard packets. Like I said I order out Chinese more than anything else when I don't feel like cooking. My wife saves every packet of sauce like she's getting ready for the apocalypse. I ordered out last weekend and got a couple really gross egg rolls....went to put the packet of mustard on it and it just did't look right. So I got one of the old packets we had saved from previous orders and compared. The one that came with the dinner we just ordered was a nasty shade of brown, while the older one was a vibrant yellow. Same brand etc......I guess the newer one was one they found under the counter of the restaurant from the 80's because it was spoiled!! LOL

    Chinese egg rolls are made with bean sprouts. Tai egg rolls have cabbage.
