    I loved your video. I felt like I was right in the kitchen cooking with you and it was so much fun with that family feel to it. Sure glad I just found your channel. Definitely am going to follow you for more Italian cooking as my husband's grandmother/father came to the US thru Ellis Island from Italy in the 1900's and did all the cooking for my husband as he grew up. I need to learn how to cook some good Italian recipes for him. Great job explaining everything to us with all the tips, etc. in very simple instructions. Thank you!

    I love frittatas! I make them with Italian ingredients, southwestern ingredients....there is almost no limit to what you can include. Olives, jalapenos, cilantro, spinach, peppers, potatoes... different kinds of meat and cheeses, and on and on....lol.

    Every video I’ve seen with Italians, Grandma made this back in the day, including my Grandmother. My Grandmother did use a cast iron pan, which I now have, and flipped the frittata, not using the oven. I just made a broccoli one today for lunch, with tomato onion salad on the side, just like Grandma made on Friday nights, especially in the summer. Fresh fruit to follow.

    Made it and it was delicious. I was out of mozzarella ...used feta cheese instead ....tasted great. Served with mixed salad greens....delicious!!!

    Hey Joe... great recipe!! Used a cast iron pan which had not used in awhile. Unfortunately the bottom got a little too dark. I really would like to make this again but would like to try a different pan. Can you suggest one? I am looking forward to using some of your other recipes as well! Thanks!!

    The best thing about frittatas is their versatility. You can make a ham and cheese and bacon for breakfast, a veggie one for lunch, or a loaded one for dinner with potatoes, cold cut meats and sausages, crab, shrimp, mushrooms, even lobster. Season it in so many different ways, depending on the occasion. I love them and eat them all the time!!

    I wanted to know the oven temperature and couldn't find the recipe. Is it just 350, or higher?
    I'm going 5o make th8s with sweet potatoes instead of potatoes and see how it tastes because that's what's on hand...also got a little bacon and I like the suggestion of cutting up the spinach small.
    Serve with salsa maybe.

    I"m late to the party, but I've been loving watching your videos. One of my parent's favorite things I make for them are my Frittata's, and I will definitely be adding your recipe to my repertoire! I'm off to check out your Braciola recipe. Another old family favorite that my Italian grandmother taught my Irish/Scottish mother how to make, but we haven't had it for years. I'm trying to bring back some old classics. This Easter I will attempt my first Taganu (we pronounced it Thanu')!

    Good job Joe, just like I use to do it here in Italy!
    Just a tip for all the american friends: if you happen to have some cold leftover frittata just make a sandwich with it, just ad some fresh lettuce if you want.
    Oh, and btw: do you know that you can make frittata also with leftover pasta? ;)

    I followed this recipe and used a cast iron skillet, but the bottom of the frittata came too dark and had that sulphur taste.
    I thought I might have had the initial heat too high, however it took 10-15 minutes to set enough to put into oven so I'm not sure.
    Any suggestions?

      John Pavlovitz try using a quality non-stick pan and cooking more traditionally. Meaning once everything is in the pan including eggs, “fold” (carefully mix) everything as it cooks on the cooktop. After a few minutes you should see the cooked egg curds in with the non cooked eggs. Once you are about 2/3 to 3/4 cooked, smooth out and put in oven. This will still be enough time to firm up and should make removing whole easy (if you want). You can still add cheese to the top and boil to brown. Just make sure your non-stick pan is oven safe.
      Typically you need to cook the edges in a cast iron pan a bit longer and darker to ensure it doesn’t stick. Especially if your not use to using cast iron. Cast iron retains heat so well and evenly, it why cast iron corn bread, pizza, steak, is so good. But (IMO) it is a preference on something like eggs. I usually use non-stick for my frittatas. Try both! See what you like!
