Grazie Pasquale, ho l'acquolina in bocca 😂. So this is a Roman version to use bucatini. In Amatrice they use spaghetti and no olive oil since guanciale has enough fat to be rendered. I was JUST THINKING that I don't see any Guanciale around here, have never heard of it... but we have lots of Hog Jowls! Smoke flavor, sometimes you can find peppery bacon. BUT there is some nice fatty hog jowl in my refrigerator right now! I feel lucky. Might actually go look for some imported tomatoes, just to celebrate. This seems very close to actually happening. Bucatini all'Amatriciana was, quite literally, the first truly authentic Italian dish that I ever did. It is still my favourite pasta due to its ease and simplicity of preparation. My only difficulty is the fact that (possibly due to this stupid virus) I cannot get bucatini where I live. I may need to start ordering it online!

So I have made some chilled shrimp and nice lemon slice, good coctail sauce I make with Kelchners Horseradish, that's a Oh yeah Baby Too!
